POSITION SUMMARY

To lead the execution of strategic and creative sales and marketing plans to drive revenues across the different restaurant and bar outlets of the hotel. Direct and organize the activities of the Food and Beverage operations while maintaining high quality standards of food and beverage, driving profitability, and creating memorable experiences for our guests with excellent service.

ESSENTIAL FUNCTIONS

• Provides leadership, guidance and assistance rela�ng to the execu�on of revenue and marke�ng func�ons of all Food & Beverage outlets. • Conducts ongoing research of the Food & Beverage industry latest trends to drive revenues while crea�ng memorable experiences for our guests. • Demonstrates posi�ve leadership characteris�cs that inspire team members to meet and exceed standards and promote team member empowerment. • Engages and par�cipates with the Execu�ve Chef and restaurant managers in the crea�on of striking menu op�ons designed to atract the local customer as well as our in-house guests.

YOUR PARTNER IN GROWTH | Position Overview | www.searchwideglobal.com 4 • Plans and directs the func�ons of administra�on and planning of the Food and Beverage Department to meet the daily needs of the opera�on. • Clearly communicates, assign and delegate responsibility and authority for the opera�on of the various food and beverage outlets to include the banquet opera�ons. • Ability to drive revenues thru social media • Develop, implement and monitor schedules against current forecasts to achieve targeted payroll margins of all outlets’ opera�ons. • Implement effec�ve control of food, beverage and labor costs among all sub-departments to achieve established profitability margins. • Assist the management team establishing desire standards of quality food, service & cleanliness of the F&B areas. • Regularly reviews and evaluates the degree of customer acceptance of the individual restaurants and banquet service, to recommend to management new opera�ng and marke�ng policies whenever declining or constant sales imply dissa�sfac�on by the customers, a material change in the make-up or the customer market, or a change in the compe��ve environment. • Develop and u�lize the opera�ng tools necessary to ensure up to date resources are used to ensure budge�ng, accurate forecas�ng, purchase specifica�ons, recipe crea�on, por�on specifica�ons, menu abstracts, food produc�on control are achieved. • Promote flexibility and adaptability in the hiring prac�ces to encourage an evolving workforce. Create and administer training and development programs to provide exper�se at all levels and permit advancement for those persons qualified and interested in career development. • Effec�vely communicates, verbally and in wri�ng, with Banquet Manager, Event Manager, Catering Managers, as well as all other departments of the hotel. • Establish and maintain inventory par levels that support exis�ng levels of opera�ons. • Other duties as assigned.

SUPPORTIVE FUNCTIONS

In addition to performance of the essential functions, this position may be required to perform other supportive functions to include but not limited to:

• Scheduling, conducting and documenting departmental meetings. • Timely completion of required training of all team members. • Execute payroll functions accurately and on a timely manner to ensure a smooth payroll processing. • Keeps work area and department specific bulletin boards neat and organized at all times. • Must maintain a positive working relationship with other departments, team members and guests.

SAFETY REQUIREMENTS

Personal Protective Equipment (PPE) may be required when performing work duties that may have the potential of risk to your health or safety. The hotel will provide the required PPE. Team members will be trained in the proper use and care of any assigned PPE. Responsible to report defective, damaged or lost PPE, or equipment that does not fit properly to Loss Prevention.

SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential function for the job, with or without reasonable accommodation, using some other combination of skills and abilities.

• Extensive knowledge of restaurant and bar revenue genera�on. • Extensive knowledge of food and beverage opera�ons to include supervisory skills, service techniques, and guest experiences. • Thorough knowledge of execu�on of banquet events. • Ability to embrace and implement change to achieve targeted revenue and opera�onal effec�veness. • Ability to communicate in English, both verbally and in wri�ng, with guests and employees, some of whom will require high levels of pa�ence, tact, and diplomacy to defuse anger, to collect accurate informa�on, and to resolve problems. • Ability to lead by example. • Ability to embrace and promote cultural diversity in the workplace. • Ability to work under pressure and deal with stressful situa�ons during busy periods. • Ability to con�nuously perform essen�al job func�ons on a variety of shi�s, for extended periods. • Ability to train and coach on a constant basis. • Considerable skill in math and algebraic equa�ons using percentages are necessary to assist in monthly forecasts and comple�on of daily banquet checks. • Ability to listen and communicate effectively. • Ability to access and accurately input information using applicable computer systems. • Ability to stand, walk and continuously perform essential job functions. • Hearing and visual ability to observe and detect signs of emergency situations. • Ability to push/pull cart/ table weighing up to 150 lbs.; grasp, lift to waist and carry items weighing up to 50 lbs. • Knowledge of scheduling aiming at productivity improvement. • Ability to effectively manage time.

QUALIFICATION STANDARDS

EDUCATION: Minimum of 4-year college degree preferred.

EXPERIENCE: Minimum of 5 years’ experience in Food & Beverage Management.

GROOMING/UNIFORMS: All employees must maintain a neat, clean and well-groomed professional appearance.

OTHER

Regular attendance in conformance with the standards established by Hilton Palacio del Rio, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.

Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.

Upon employment, all employees are required to fully comply with the hotel’s company policies and regulations for the safe and efficient operation of hotel facilities. Employees who violate hotel rules and regulations will be subject to disciplinary action, up to and including termination of employment.

NOTICE

Standing, bending, stooping, and lifting weights up to and including 50 pounds may be required. The hospitality business functions seven (7) days a week, twenty-four hours a day. This is a hospitality business, and a hospitable service culture must be projected at all times with both internal and external customers.
