Tomato Cracker Salad

[ 4 medium garden-fresh tomatoes, 3/4 C mayo, 1 sleeve saltine crackers-coarsely broken, salt, pepper ]

Seed & coarsely chop the tomatoes. In a medium bowl, combine the tomatoes & mayonnaise. Add the broken crackers & toss lightly to coat. Add salt & generous amounts of black pepper to taste. Serve immediately.

'Jiffy' Lemon Cookies

[ 1 pkg. 'Jiffy' Golden Yellow Cake Mix, 2 T instant lemon pudding mix, 1/4 C margarine or butter-softened, 1 tsp. lemon-extract, 1 egg ]

Preheat oven to 350* F. Grease baking sheet. Combine cake mix, pudding mix & margarine or butter. Add lemon extract & egg. Drop by teaspoon on baking sheet. Bake 10-13 minutes. Remove from baking sheet after 1 minute. Makes 10-12 cookies.

Mini Doritos Cheese Balls

[ 4 oz. cream cheese-softened, 1/2 C shredded cheddar cheese, 1 T taco seasoning, 1/2 C crushed Doritos, Rold Gold Pretzels Sticks for serving ]

Add softened cream cheese, shredded cheddar & taco seasoning to a small bowl & stir until well combined. Scoop into about teaspoon-sized balls & roll in crushed Doritos. Serve immediately or store in an airtight container until ready to serve. Add Rold Gold Pretzels into each mini cheese ball for easy serving.

Strawberry Lemonade

[ 1/2 lb. strawberries (1 1/2 C) - trimmed & halved, 1 1/2 C fresh lemon juice (from about 5 lemons), 1 to 1 1/2 C sugar, 3 C cold water ]

Puree strawberries with 2 T lemon juice in a blender until smooth, then force through a fine sieve into a bowl to remove seeds. Stir together strawberry puree, remaining lemon juice, 1 C sugar, & water in a large pitcher until sugar is dissolved. Taste, then add more sugar if desired. Serve over ice. Makes 1 1/2 quarts. Lemonade can be made 2 days ahead & chilled, covered.

The Mystery Of NASA’s Missing Moon Rocks of Harrison County, KY It’s been 50 years since the U.S. successfully put the first men on the moon. They brought back a stockpile of moon rocks, most of them ending up in Houston for research at NASA and on public display under the care of highly-trained NASA scientists at Space Center Houston.

President Nixon also gifted small samples from Apollo 11, like a “goodwill moon rock” in a window at the National Cathedral, to all 50 states and territories and countries around the world. But Gutheinz discovered many of those rocks are now unaccounted for. Delaware and have not been able to find their samples. One person in New York said that the last person known to have theirs was Governor Nelson Rockefeller. None of his family or staff were able to give any clue about what might have happened.

“There were a number of moon rocks that were missing. So essentially nobody tracked these $5 million gifts that they were given by the Nixon Administration,” Gutheinz said,” it shocked me.” Many were either lost or sold on the black market. Some Apollo moon rocks were even at the center of a $20 million heist. Gutheinz began tracking them down and has located about 80 so far.“There was one that we found in a shoebox,” he said.

Ironically, the sample given to one country was found in a shoebox in a closet. No special care had been taken of it and it had, for all intents and purposes, been forgotten. Two young NASA interns masterminded the theft of a very heavy safe where many of the rocks were stored. Fortunately, these thieves were apprehended and much of the treasured stones were returned.

Gutheinz hopes getting the word out will help him locate more moon rocks around the world. He said, “I have no doubt that I will get leads predicated on this story.” With a little lunar luck he’ll find them. Moon rocks can go for big money. In 2018, Sotheby’s legally auctioned a Russian moon rock totaling the weight of a raindrop for $855,000. Experts say to contact NASA or state law enforcement if you think you have a lead to the missing moon rocks. ***excerpts from msn.com 9 12

This Week: Maple Hill ~ The C. V. Whitney House Revisited

Maple Hill, The C. V. Whitney Farm in Lexington was established in 1915 by H.P. Whitney, who moved his stock from the historic Brookdale Farm in New Jersey. The farm & bloodstock was inherited in 1930 by his son, C. V. Whitney. The property encompassed prime pastureland, a section of North Elkhorn Creek, a one-mile training track, one of James Ben Ali Haggin's twelve-sided yearling barns, & a horse cemetery. Cornelius Vanderbilt (C. V.) was also the recipient of $ 20 million dollars left to him by his father. However, by this time, C. V. had acquired his own status in the business world. After graduating from Yale in 1922, Mr. Whitney embarked on several ventures of his own. He founded Pan American Airways & took control of the Hudson Bay Mining & Smelting Co. in Canada in 1931. During the next few years, he opened the Marine Studios (Marineland) in St. Augustine, Fla., & he went in to moviemak- ing with the producer David O. Selznick, helping to finance & produce such Hollywood films as Gone With The Wind. He served in WW II & later joined the Harry S. Truman Administration in special assignments. As his commitment to horses & racing grew, Whitney purchased Maple Hill house (which later became known as Whitney House) & the surrounding 60 acres in 1951 to add to the 900 acres of Kentucky horse land he already owned. In 1959, C. V., now 3 times divorced, married Marylou Hosford; an actress he had met casually while dining in Phoenix, Arizona. After 2 weeks of marriage, the newly- weds & her 4 children from a previous marriage, came to Lexington to live at Maple Hill. Worm-eaten floorboards gave way beneath her feet & Antique Talk there were snakes in the basement. Marylou took C. V.'s hint that she 'make some changes,' & turned Maple Hill into the showplace of the bluegrass country.
