Olivier is also installing a plaque at each one of the mountain springs to represent the fauna and flora that are typical of that spot. Photographers will also be taken every 50 km from the source to the estuary, a portrait of the Loire in 22 pictures.

8 Landscape artist Gilles Clément Artist responsible for the Quai Branly museum gardens in Paris, Gilles Clément was immediately inspired by the concept of The Watershed. ‘All the artists involved have the chance to change people’s per- ceptions and to personally enhance the visibility of a landscape that isn’t always evident at first sight,’ he says. Line of Vision is Clément’s own interpretation of the geographical watershed, 18 viewpoints along a 50km route, each one with a post topped with a coloured marker that points towards a lands- cape crossed by the watershed line. And whilst on Mont Gerbier de Jonc he realised that the mountain acted as a water tower by capturing humidity from the air and directing it towards the Atlantic or Mediterranean. Designer Eric Benqué Based in Paris but with a house in Ardèche, designer Eric Benqué is delighted to be involved with The Watershed, a project that gi- ves this rural department a significant place in the world. ‘Water is a natural element that circulates – there’s a notion of exchange here.’ This idea of exchange has inspired the hard landscaping that Ben- qué has created along the trail. There are no horizontal surfaces, only slopes to allow the water to run off, as well as spaces where light can get through and plants flourish. He has avoided foundations and chemical treatments, opting for local chestnut and creating outdoor furniture that blends with a dozen sites along the GR7. An area of duckboard, for instance, and a bench measuring 3m by 1m where several people can sit together; a platform for relaxing or picnicking at Gerbier de Jonc and a shelter like an agricultural tunnel at Mont Mézenc. The Ardèche Museum Life on earth and the origins of the Ardèche are vividly showcased in the Ardèche Museum in the heart of Balazuc, one of the Most Beautiful Villages in France. Moonlit evenings on the Ardèche river A canoe trip down the Ardèche is a must-do at any time of day, but there’s something magical about a canoe trip by moonlight. 17 The Great Route of the Monts d’Ardèche (315km) With an ascent of 3,200m and a descent of 4,000m between Saint- Agrève and Les Vans, the Great Mountain Bike Route of the Monts d’Ardèche has been designed for mountain bike touring. This itinerary is 315km long, starting from to Bourg- St-Andeol, crossing Les Vans. It largely follows the GR7 and GR4, passing through the Massif Central and the Cévennes, and over the famous Mont Mézenc and Mont Gerbier de Jonc. Accessible to all, the trail is clearly marked ‘Grande Traversée de l’Ardèche’. Tip: a fresh stop at , accommodation, bathing, wind- amongst pine trees.

The ViaRhona from Lake Geneva to the Mediterranean: this cycle route project aims to link Lake Geneva to the Mediter- ranean by following the Rhône. This 700 km itinerary will pass through the Ardèche and the Drôme. The Dolce Via – take life gently on two You don’t need to be hugely sporty to tackle the Dolce Via. With a gradient of just 1%, this former railway track in the Eyrieux valley has been given a new lease of life as a trail for walkers, cyclists and mountain bikes stretching for 75 km. The route currently links Saint-Laurent-du-Pape to St-Martin de Valamas and Les Nonières but will eventually join the ViaRhôna at La Voulte and on towards St-Agrève and to create a 93-km trail. Travel with friends, family or as a couple to explore the Eyrieux valley and enjoy picture-postcard landscapes and fresh, country air. Along the way are opportunities to have lunch on a restaurant , relax at a shady café or picnic in the rocks. You can even hire a canoe. Tip: Explore La Dolce Via by bus and bike From April 1 to Nov 30, take your bike on the bus to either end of the trail and then cycle to the other end. 18 ‘On the trail of the Ardéchoise’ Follow the 13 different stages of the famous Ardéchoise cycle race at your own pace and at any time of year along routes labelled, ‘Sur les routes de l’Ardéchoise’. The shortest stage measures 85km, the whole route 620km, but it’s easy to pick a shorter section to suit your ability. So whether you want a sporting challenge or a gentle pedal through the country- side, the routes offer something for everyone. Along the way, accommodation providers labelled ‘Accueil vélo’ offer special facilities for cyclists including repair kits, luggage and super-nutritious breakfast. La Voie Bleue - The Blue Trail This 12km trail for walkers and cyclists runs alongside the Rhône between Guilherand-Granges and Châteaubourg, and Tournon- sur-Rhône soon. Heading towards Guilherand-Granges, users can join the trail just 100m from the ViaRhôna car park at Pont des Lônes, direction Soyons. However the north-bound junction with ViaRhôna for the 2km between Châteaubourg and Glun, is still to be completed. Half of the trail has been resurfaced, the rest covered with tarmac. Most of the trail follows the river bank, passing through an uns- poilt natural environment rich in fauna and flora, and car and

The Payre valley A new lease of life for this old railway line! Initially created in 1861, the Pouzin / Privas railway was the 1st railway line to enter service in Ardèche. At this time Ardèche was among the leading industrial counties of France and the railway allowed the transport of iron ore extracted from the mines in the Privas basin. Reserved for passenger transport by 1910, it was again used to transport local production, before closing altogether in 1994. This old route has many interesting structures: tunnels, viaducts, bridges, footbridges, and hydraulic works. Abandoned in recent decades, this heritage line consequently now needs work and a programme of restoration is now under way. In the future, the whole itinerary will cover 20km and reach Privas

Vélorail Enjoy an unusual journey through the wild, lush valley of the river Doux on a pedal-powered on wheels that runs on a disused 12km rail track. Completely silent and requiring very little effort, the trip starts from Boucieu-le-Roi and finishes at St-Jean-de-Muzols station, passing wonderful works of art along the way. The second track ends at Lamastre at Monteil station. This new journey rather crosses plain fields but re- quires much effort. Early in 2017, they will unveil their own vintage produced by Mai- son Colombo in Cornas with the expert help of Laure Colombo who has come up with a Cornas that is rich in red fruit and spices, suitable to be drunk immediately or laid down. And in spring, four new chefs will join the elite band of Toqués, bringing their own personal style to the mix. The Toqués first recipe book was called ‘7 Chefs, 7 Products’, echoing the number of the Department. A second book is now planned for the autumn, the first in a series, ‘The Four Seasons of the Toqués’, published by Sud-Ouest. Recipe from ‘Les Toqués d’Ardèche’ Top Ardéchois Chefs ! Ardèche Trout cooked skin side down, chestnut risotto, bacon foam For 4 people Preparation, 25 minutes; cooking time, 20 minutes. • 4 fillets of Ardèche trout • 250g shavings of Ardèche chestnuts • 50g of farm-produced bacon • 50g of mixed carrot and turnip • 10g celery sticks • 1 oignon • 1 clove of garlic • Thym • Bay • 50cl of chicken or vegetable stock • 70cl of whole milk • 10cl of cream • 2g of soy lecithin • Baby vegetables Remove bones from the trout fillets and trim them to produce four equally-sized, rectangular fillets. Keep cool. Wash and peel the vegetables. Cut the carrot, turnip, celery, onion and garlic into fine pieces. Melt a knob of butter in a sauté pan and sweat the vegetable mix, adding the thyme and bay leaf before pouring in the chestnut pieces and cooking them to a sheen. Moisten with the stock and 50cl of the milk. Cook on the heat very gently, shaking the pan frequently and adding liquid if necessary but in small quantities. Infuse the bacon in the rest of the milk, mix it and then sieve. Check the seasoning, add the soy lecithin, and stir. Put to one side. Cook the trout fillets in a hot pan with very little fat, skin side down and without turning them over. Make a few shreds from the

Caveau de Beylesse Rémi Nodin, passionate about wine The one word that best describes Rémi Nodin is ‘passionate’. In 2008, at just 30-y-old, this young winemaker took on the vineyard which has been in his family for four generations. ‘I had just 1 hectare to start with and today I have 9.5,’ he says. ‘Located in St-Péray and the surrounding area, the vineyard is typical of the local terroir so I’m proud to work the land in such a way as to bring the flavours out in my wines. Whether they are St Joseph, Cornas or Croze Hermitage, I want the soil, climate and grapes to speak for them- selves without too much .’ So Rémi uses a horse to work some of his smaller parcels of land and makes a range of St Péray wines without too much added sugar. Today he produces 25,000 bottles but plans to produce 60,000 and to build a cellar. Visits finish with a tasting in a 19th century vaulted stone building. Clos de l’Abbé Dubois Claude Dumarcher, spotlight on Brunel ‘Brunel’ is a word which really enthuses winemaker Claude Dumarcher. This clever blend of black Jurançon and Grenache grapes was discovered in 1982 by Léon Brunel, winemaker and nurseryman. Unusually, this new grape variety was the result of spontaneous germination caused by the wind and the grape was refined and grown from cuttings, before being accredited by ‘Inra’ – National Institute of Agronomic Research. Today, the Brunel grape is planted out on half hectare and pro- duces red wines with deep colours and powerful aromas – red fruit, leather and liquorice. ‘I only produced 3000 bottles this year but the future is looking really good,’ says Claude Dumarcher, who has taken on the challenge with his wife Cécile, winemakers at St Remèze dating back several generations and supporters of responsible farming. 34 Cave Blachon - Sébastien Blachon, self-taught winemaker Sébastien Blachon got into wine-making completely by accident when he impulsively bought a 3500m² parcel of land back in 2009 and taught himself wine-making alongside his day job. He began to rent other small parcels of land, finally becoming a full-time winemaker in 2015. Now he has 5 hectares of vines and produces St Joseph red and white, as well as Vin de Pays in red, white and rose. ‘I really respect the soil and the vines, so I do the harvest by hand and support responsible farming. Several years on, I have absolutely no regrets. Flourishing well in the local climate, the chestnut tree has forged the identity of the Ardèche across the centuries and is still important today to the local agricultural economy and associated industries. So local producers were determined to gain AOP recognition for the Ardèche chestnut.
