Coffee cherry is carefully sorted, depulped with the vintage vertical depulpers, slowly fermented for 48 hours in cold spring water, then double washed with a 48-hour soak. There is versatility with drying strategies. Micro-lots are slowly dried on patios and raised beds, while mechanical dryers are used for drying larger lots. Although there is an abundance of spring water, Alfred has configured the mill to operate with 5,000 liters per day, which is recycled several times and then returned downstream, clean, pH balanced, and oxygenated thanks to a state-of-the-art water purification system and bio-digester. All of these layers of efficiency are essential because weather patterns have become more and more unpredictable. Alfred also runs his own dry mill using a series of 3 vintage catadores (wind channels) to classify his coffee. He explained that cherry selection and classification at the wet mill is so good that he does not need any more equipment in his dry mill to sort the coffee. Alfred’s wife Annette is also deeply involved in the business, handling human resource and labor law compliance for employees, as well as all the export logistics from Tapachula, including refrigerated banana containers, expediting their shipping schedule.

    2016 ANNUAL REPORT Ten Peaks Coffee Company Inc. To our Shareholders, If you’re a coffee lover, you’ve probably noticed that there are a lot more ways to enjoy great coffee these days. There’s the traditional drip-brewed, French press and espresso- based coffee drinks. There’s newer alternatives like “pour-over”, “chemex”, “aeropress” and “siphon” coffees (the production of which strongly resembles a very cool science experiment, complete with lava and lasers). And then there’s “cold brews”, a smooth, naturally sweet coffee made by steeping coarsely ground beans in cold, filtered water for 12 to 14 hours. Cold brewing has become so popular in recent years that it’s spawned an entire sub-category of specialty coffee drinks, including “nitro” cold brews served on tap. While the means are varied, the goal is the same; to create and serve really delicious coffee. We certainly love our coffee, but we also know that too much caffeine can be detrimental – to our mood, our sense of well-being or to our sleep patterns - especially when consumed late in the day. Until quite recently, that meant most people cut off their coffee intake by 2 pm. Our mission is to change that behaviour, both for the enjoyment of coffee consumers and for the profitability of our customers. With today’s broad proliferation of coffee formats and caffeine levels, there’s a wonderful opportunity to bring consumers through an all-day coffee experience, while enabling our customers to sell more coffee drinks and growing the entire coffee category around the world.

Abstract The majority of pressure filtration methods for coffee preparation constitute acceptable alternatives for the obtention of coffee with bitter notes and body. In this study, antioxidant metabolite retention, antioxidant activity, and cup profiles were determined for coffee beverages prepared using five methods of pressure filtration. The methods which registered the highest antioxidant retention rates were Espresso, Moka, and Staresso. The highest hydroxycinnamic acid content was obtained with the Staresso, Espresso, and Moka methods, in descending order. Antioxidant capacity was proportional to antioxidant compound retention, with the ORAC method, in the beverages prepared, but not with the ABTS methodology. The Presso method had the lowest antioxidant retention rate. The beverage prepared with the Aeropress method obtained the lowest amount of antioxidant metabolites. In the five preparations evaluated, the most prominent hydroxycinnamic acid was chlorogenic acid. It is recommended that coffee prepared with the Espresso or Moka methods be consumed. February 2018 Abstract Abstract For billing coffee, the faculty of Communication and Networked Systems (ComSys) is look- ing for a way to monitor the usage of the faculties’ coffee maker. This thesis describes the reverse-engineering of a De’Longhi Coffee Maker to allow for precise billing of coffee consumption. Currently, consumption is measured by manually keeping track of who’s ordered a coffee on a sheet of paper next to the coffee maker. This method has inherent problems: aseach coffee is billed the same amount, it is not based on the actual amount of coffee butrather the count of beverages. A small cup of very light coffee costs the same as a large cupofa very strong brew - even though it consumes less actual beans. Also, this method is prone to error: people may forget to make a mark when ordering and thus overall amounts may be skewed. Finally, a list kept up-to-date manually can’t be analyzed over time and does not allow for reporting of coffee consumption or even prediction of when to order new coffee beans. This thesis solves the problems associated with manually keeping track of consumption by developing an automated method of monitoring the coffee maker.

When we first designed the Rhinowares grinder, it was based on a number of factors and ​ ​ common problems I would hear back from customers on grinders selling for under $75 * Handle comes off too easily * Central rod wobbles – affecting grind consistency * Too big to hold in one hand – a must for any hand grinder * Made of plastic – breaks easily So my aim was to develop a grinder that would address these key points, which I think we did! My good friend and long time product tester and critique extraordinaire James Phillips from Dose fed back that an issue with many grinders was that the outer burr moved whilst grinding. I ​ spoke to a Japanese supplier about this as I noticed all Japanese style hand grinders had this 'feature'. He said it was designed this way so when a hard bean or object was in the burrs the outer burr would move and let the object through. With modern Specialty Coffee roasting and processing we rarely get this. So we focused our design on removing that outer burr wobble. This improved the quality of grind dramatically…..no big broken chucks or unusual size grinds of coffee coming through. We test grind quality using several fine grade geo­tech screens and believe our consistency of grind is now one of the best on the market in the under $ 200 hand grinder category.

I am delighted to see that nearly 60 countries and regions will be represented on stage here in Amsterdam over the next four days, and that audiences in over 100 countries/regions will be able to follow each round live, via the livestream at worldbaristachampionship.org. Whether at qualifying events or on the world stage, a huge amount of innovation has happened in the last 19 years, and we will see that continue for many years to come. A significant amount of new changes were introduced at WBC Seoul in November 2017, which added to the excitement for audiences at home and in the risers.

    BOREDOM ESCAPES US: A CULTURAL COLLAGE IN ELEVEN STOREYS by Lesley Kenny A thesis submitted in conformity with the requirements for the degree of Doctor of Philosophy Graduate Department of Sociology University of Toronto ©Copyright by Lesley Kenny (2009) BOREDOM ESCAPES US: A CULTURAL COLLAGE IN ELEVEN STOREYS Doctor of Philosophy, 2009 Lesley Kenny Department of Sociology University of Toronto Abstract Few sociologists have addressed the concept of boredom despite interest in the subject and experience of boredom from psychology, philosophy, the arts and popular culture. Classical sociological concepts of alienation, anomie and disenchantment are related to boredom, but do not address it directly. The history of the word boredom itself is not clear, though it appears it was first used in the late 19th century. Most authors agree that an increase in individualism and the concomitant rise in secularization, combined with industrial changes in labour and increased bureaucracy, help to explain a perceived increase in the experience of boredom. This dissertation is a phenomenological exploration of boredom, informed by the writings of Martin Heidegger and Walter Benjamin on the subject. Inspired by Benjamin’s method of literary montage, from his monumental Passagenwerk, I construct a cultural collage of the subject of boredom. I use the metaphor of storeys (the levels of a building) as an organizing device to construct the empirical work of this project. These storeys include a consideration and analysis of: billboards, internet advertising, the reflections of an overseas development worker, art installations, a poem, a greeting card, a play, song lyrics and Kafka’s short story character, the hunger artist.
