ABSTRACT Chemical composition (fat, moisture, protein, salt, titratable acidity, and pH), proteolysis (free amino acids), lipolysis (total volatile fatty acids and free fatty acids), and some mycotoxins were determined in all cheese samples studied. Saint Agur was characterised by its high concentrations of total protein (22.04%), total amino acids (5.21mg/ g), fat (33.79%), and TVFA (25.3 ml NaOH/100 mg cheese) and lowest concentrations of salt (2.41%) and moisture Bleu d’Auvergne, had a pH around 6.0, and the highest concentrations of salt in moisture (8.0%), soluble .(40.20٪) nitrogen (51.98%), moisture (47.09%) and salt (3.76%) of all cheeses investigated. Bleu d’Auvergne had the lowest fat content (28.42%) and TVFA (20.1 ml NaOH/100mg cheese) of all the cheeses studied. Cheese samples were analyzed for seven mycotoxins (Roqurfortine C, Mycophenolic acid, Penicillin acid, Afla- toxin G1, Aflatoxin M1, Aflatoxin B1, Aflatoxin B2). Roqurfortine C was detected in all of the blue mould cheese samples in concentrations of 1.6-14 µg kg-1. Two blue-cheese samples (Saint Agur and Moby blue) contained also 0.35 and 0.47 µg kg-1 mycophenolic acid, respectively. Penicillic acid was detected (0.12, 0.41 and 0.53-1 µg/ kg) in Gorgonzola, Saint Agur and Moby blue, respectively. Aflatoxin G1, aflatoxin M1, aAflatoxin B1 and aflatoxin B2 were not detected in the tested cheeses, this is likely to be due to best manufacturing practises applied in the cheese production, and at the same time the storage conditions are all strictly controlled in order to avoid mould contamina- tion and aflatoxins formation. Results showed that, % of fat and fat in dry matter ranged between (29 to 36) and (52.51 to 64.96), respectively. Moisture and total solids contents ranging between (39.44 to 45.02) and (54.98 to 60.56) respectively, while soluble nitrogen and amino nitrogen, were (42.51 and 50.48), (18.21 to 22.00) respectively. Total protein and its percentage in the dry matter, the results ranging between (18.66 to 23.00) and (31.22 to 43.60) respectively. the concentrations of both tyrosine and tryptophan acids ranged from (0.36 to 0.44) and (0.42 to 0.55). free fatty acids and volatile fatty acids, ranged from (33.00 to 70.00) and (15.00 to 42.00) . The microbial load ranged between (2.3 x 10 5 to 18.5 x 10 5). While fungi and yeasts ranged between (14.5 x 10 5 to 150.1 x 10 5) cfu. Coliform bacteria group and the anaerobic spore former bacteria had not been detected in all investigated cheese samples. study showed that the presence of roquefortin C in all cheese samples with a range of (1.9 to 5.21) with an average of 3.58, and the cheese samples number 3, 7, and 8 contained benicelic acid and were not detected in the rest of the samples, while the study confirmed that all samples, were completely devoid of both aflatoxin G1, M1, B2, and B2.

Ces acquisitions ont été formalisées par une offre de reprise transmise à l’administrateur judiciaire désigné par le tribunal de commerce de Clermont-Ferrand le 16 avril 2007, Toury ayant été placé en redressement judicaire par jugements de ce même tribunal des 3 et 6 avril 2007. Par ailleurs, il convient de noter que, dans la mesure où, pour être jugée recevable par le tribunal de commerce de Clermont-Ferrand, son offre de reprise devait être inconditionnelle – nécessité particulière dûment motivée – Dischamp a bénéficié, conformément aux dispositions du 2 ème alinéa de l’article L.430-4 du Code de commerce, d’une dérogation individuelle en date du 2 mai 2007, l’autorisant à prendre le contrôle exclusif de ces actifs de Toury sans attendre la présente décision.

The delegation of Spain has submitted the provision published in the Official Gazette of 28 December 1973, setting forth the regulating duties in force at that date and also at 1 January 1974, as well as the provision published in the Official Gazette of 15 March 1974, which shows an amendment concerning products for animal feeding. The following comment was made: "It may be soon that since then, and with the exception of some cheeses, most of the regulating duties are purely symbolic,. being at the rate of 10 to 100 pesetas per metric ton.
