Location: The Adirondack League Club Old Forge, New York

Position: Executive Chef

Facilities: Established in 1890, the Adirondack League Club is a private fishing, hunting and social club with 425 members located in the southern Adirondacks of New York. It is the largest preserve of its kind east of the Mississippi. One of the main objectives is the maintenance of a preserve for the rest and recreation of its members. Little Moose Lodge is the main lodging and restaurant facility of three on the Club. Food and beverage volume $350,000 annually. Traditional summer high season of June to September.

Qualifications: The Little Moose Chef reports to the Little Moose Lodge Manager and will be responsible for all food and pastry production that are used in the restaurant and banquet functions. Two year or four year college or university degree in culinary arts. Five years minimum experience as a Sous Chef, Executive Chef, or comparable position in a quality restaurant, hotel, resort, or country club. Strong food cost and inventory management expertise and the ability to recruit, train and retain a dedicated, service oriented team are required skills. The successful candidate will be hands on chef working with a smaller staff do to seasonal business volume. Private club experience is desired.

Job Requirements:  A warm, personable and "hands-on" management style.  Maintain high level of professional food quality to assure that the club provides nutritious, flavorful, and appealing food properly prepared.  Assist Lodge Manager with menu planning for events.  Closely monitor guests dining experience, cost of sales, and inventory.  Instill a guest service attitude in all employees.  Abilities to inspire train and develop employees.  Ensure high standards of sanitation, cleanliness, and safety.  Recruits and makes selection decisions; evaluates job performance, corrects, rewards and disciplines staff in a fair and legal manor.

Other Expertise:  A firm organizational focus, diplomacy, attention to detail and flexibility are required.  A degree in culinary management or previous experience in club, restaurant, hotel, resort or catering is required.  Supervisory experience and a strong knowledge of food and beverage management.  An interest in fishing, hunting and other outdoor recreation is valuable.

Job Value: Compensation package: Salary $50,000 range, negotiable. Other compensation and benefits include club provided housing, year-end bonus, vacation plan, family medical insurance, 401K profit sharing and employer paid retirement plan.
