This year, that focus on ingredients has taken an even more interesting turn: Kwong now departs significantly from the Cantonese canon by shifting the focus to the sorts of native Australian ingredients not typically seen on Australian tables, let alone Hong Kong. That equates to steamed dumplings made with Spencer Gulf prawns and sea parsley, deep-fried garfish garnished with jewels of finger-lime, and crisp-skinned pasture-fed duck with a sauce made from quandongs and orange. It’s different, but most importantly, it’s delicious. • The Contradictions of Australian Food Culture
Terra Nullius, Culina Nullius: The contradictions of Australian food culture John Newton A thesis submitted for the degree of Doctor of Creative Arts University of Technology Sydney 2014 CERTIFICATE OF ORIGINAL AUTHORSHIP I certify that the work in this thesis has not previously been submitted for a degree nor has it been submitted as part of requirements for a degree except as fully acknowledged within the text. I also certify that the thesis has been written by me. Any help that I have received in my research work and the preparation of the thesis itself has been acknowledged. In addition, I certify that all information sources and literature used are indicated in the thesis. Signature of Student: Date: 1.11.14 2 Abstract In addressing the contradictions of Australian food culture, this project asks four questions. First and most importantly: how is it that after more than 225 years, we have no Australian or regional Australian food culture, nor even any evidence – through recipes and dishes – of its more tangible and visible vector, cuisine? Secondly: what are the consequences for a nation and its people of having bypassed this important stage in the evolution of a society? Thirdly: why in over 200 years living here do we eat practically nothing that grows locally but those fish, birds, crustaceans and shellfish analogous to European produce? And finally, if we do not have a food culture in the historical sense, what do we have? The second third and fourth questions will be answered during the course of the project. The answer to all these questions will require, firstly, an exploration of the history of European occupation of this land and its occupiers.

UGC Approval No:40934 CASS-ISSN:2581-6403 HEB Gender and Language in MasterChef Australia CASS Dr. Steffi Mac English Department, St. Xavier's College, Navrangpura, Ahmedabad 380 009 Address for Correspondence: [email protected] ABSTRACT MasterChef Australia is the most popular cooking show in its nation's television history. In recent times, the Australian version of MasterChef has garnered positive reviews, feedback and a colossal fan base world over. The show's concept to put amateur home-cooks under the spot light, by giving them a chance to showcase their culinary skills and make a career in the food industry, is a premise that drives thousands of Australians to apply for the competition. Despite the fact that the show strives vigorously to impress upon the ideas of equality and inclusiveness, it barely makes a statement in shutting stereotypical gender roles. So much so, that the trailer released for season 5 projected a flimsy 'boy versus girl' battle with women priding over being better at 'presentation because we are used to grooming ourselves'! The show received backlash and eye rolls on social media for it. This paper takes the content and visual representations of the show's seasons eight, nine and ten, to study the gendered patterns, their conventional representations and language used to delineate participants, celebrity guest chefs and their dishes. It has often been debated that women are characterized as 'cook' and men as 'chef' the moment their dishes are discussed at a professional platform. It is the researcher's attempt to question the show's dearth on challenging the norms of the professional gastronomic field that glorifies male chefs for their refined culinary skills, but does little to value that of the women.

Brien The rise and fall of MasterChef magazine Central Queensland University Donna Lee Brien The rise and fall of MasterChef magazine: An object biography Abstract: One of the most high-profile recent entrants into the competitive and lucrative field of Australian special interest magazines was MasterChef magazine, which ran from May 2010 until November 2012. MasterChef magazine was a component of a self- referential group of media products that spun off the eponymously-named television series in Australia which, premiering in 2009, itself developed from a suite of British television programs and associated media that has been expanding and morphing since 1990. This article presents a biographical history of MasterChef magazine, focusing on an account of the magazine’s genesis, development, growth and demise. It offers a preliminary survey of its covers, content and writers, and begins to outline its relationship to a range of other MasterChef related media, with particular reference to other publications. It also describes the role MasterChef magazine plays in the highly branded contemporary culinary media environment and suggests areas for future research. Biographical note: Donna Lee Brien is the inaugural Professor of Creative Industries at Central Queensland University, Australia.
