PRESS INFORMATION 27 September 2019 FIVE NEW ONE-STAR RESTAURANTS RECOGNIZED IN 10th EDITION OF MICHELIN GUIDE CHICAGO Michelin today released the 2020 edition of The MICHELIN Guide Chicago. Michelin inspectors, who have been dining anonymously around Chicago for more than a decade, recognized 25 establishments that have been awarded one or more Michelin stars, including five new one-star restaurants. “Our inspectors are especially impressed by the high-end Japanese cuisine available in the West Loop,” said Gwendal Poullennec, international director of the MICHELIN Guide. “We have five new one-star restaurants in the 2020 MICHELIN Guide Chicago, each of which demonstrates a fine attention to detail and serves high-quality, top-notch cuisine.” Kikkō, a tasting counter secretly tucked away in the luxe cocktail den, Kumiko, earns one star for 2020. Executed by chef de cuisine Mariya Russell and overseen by Oriole’s Noah Sandoval, culinary highlights include sashimi, house-made tofu and seared mackerel with creative, clever touches. Chicago veteran chef B.K. Park earns one Michelin star with Mako, an impressive omakase offering a strikingly beautiful procession of sushi, while chef Sangtae Park’s Omakase Yume, an intimate spot where diners enjoy high-quality food at a good value, also earns one star. Located in the former Grace space, executive chef Mari Katsumura and team at Yūgen serve up a thoughtfully composed dining experience, where contemporary cooking is influenced by Japanese flavors and techniques that creatively reflect the chef’s personal experience. Graciela Roman (“Plaintiff”) is a former Dinex employee who worked as a busser at Bar Boulud. Ms. Roman, on behalf of herself and all others similarly situated, filed a lawsuit on August 10, 2012. The lawsuit claims that The Dinex Group, LLC and Daniel Boulud (collectively, “Defendants”) failed to pay captains, assistant captains, sommeliers, servers, bussers, runners, bartenders, baristas, and hosts, the proper minimum wage and overtime pay, as well as other wages required by law. The lawsuit seeks to recover money owed in back wages and additional damages known as “liquidated damages,” along with interest, attorneys’ fees, and costs. Dinex and Mr. Boulud deny any violation of the Fair Labor Standards Act or any other law. Dinex maintains that its tip pools have always been lawful, and that tipped employees were properly paid the tip credit minimum wage. Dinex maintains that it paid tipped employees appropriately for all hours they worked. The Court has authorized the parties to send out this notice of the lawsuit. The Court has not decided who is right and who is wrong. -

Alvarez, Assistant to the City Manager SUBJECT: Sponsorship Request for Date Harvest Festival Ferris Wheel STAFF RECOMMENDATION: That the City Council approve a $5,400 sponsorship for naming rights and free Ferris Wheel rides for attendees of the Date Harvest Festival that will take place on November 9, 2019. BACKGROUND: As you may recall, City Council on June 12, 2019 approved sponsoring the Date Harvest Festival in-kind for the use of Las Flores Park and the use of the Coachella Library meeting rooms and park for the preceding Harvest Dinner Event. The events budget is approximately $208,000 and since the City Council’s approval the event’s Producer has been working diligently to gain sponsorships to cover the events’ expenses. To this end, the sponsorships that have been collected cover 75% of the total budget so far. The event’s Producer is currently working with local non-profits to presell tickets as a fundraiser where the non-profits get to keep 50% of the ticket proceeds. Additionally, the Producer has reached out to the Twentynine Palms Military Base where the Date Harvest Festival will allow free admission for those who serve in the military or who are military veterans. MEDIA/ADVERTISING The Date Harvest Festival has appeared in the Desert Sun, NBC Palm Springs, and National Public Radio (NPR). The Greater Palm Springs Convention Visitors Bureau has promised 25 Electronic Billboards in Los Angeles and San Diego along with advertising in airports in Canada. -

This highly-regarded, curious kitchen experiments with balloons, snow, fire... all with the hopes of creating innovatve dishes. Whatever the process, just ask anyone lucky enough have a bite: Grant Achatz is one hell of a chef. AndrewZimmern.com: What did you learn from the amazingly talented chefs who have mentored you over the years before you opened Alinea? Grant Achatz: I have been lucky to have a few key people take me under their wing at various points in my development. Steve Stallard was the first chef that I worked for. I credit him with giving me a great deal of confidence at a very young and essential age. His focus very European, I remember making procuitto from scratch and butchering game that he had shot on hunting trips. He would lecture me on the importance of hanging the birds, having a light touch and cooking sensibly. Thomas Keller mentored me at the French Laundry... really, he is the main one who guided me during my formative years as a young chef and I was exceptionally fortunate to have him as a teacher. Chef Keller leads by example and more than any technique, recipe, or dish, I learned that it takes incredible commitment, time, and passion to get things right. I truly learned how to season food from him. He is the one whom I credit fully understanding food and the experience of dining can be emotional and therefore art. -

Chef Talk: Jaryd Hearn of Polo Grill & Bar By Abby Weingarten, Correspondent Posted Aug 2, 2017 at 10:02 AM Updated Aug 2, 2017 at 10:02 AM Interview plus recipe Jaryd Hearn returned to the Polo Grill & Bar in March to become the executive chef after working for two years at Alinea, a world- renowned, three-star Michelin restaurant in Chicago. Since coming back to Lakewood Ranch, Hearn has collaborated with chef/proprietor Tommy Klauber to bring a rustic, modern, locally-focused, seasonal approach to the menu. Q: What have been some of the highlights of your career? A: I began my restaurant career in 2008 at the age of 15. My first job was at the Grove House Grill as a busser and food runner before moving to a line cook position. During my time there, I met a chef who offered me an opportunity to work in New York. At 18, I moved to Bolton Landing. I spent a season at Lakeside Restaurant, working as a junior sous chef. This experience showed me how to handle a high- volume, fine-dining restaurant while working over 90 hours a week. After my time in New York, I returned to Bradenton to attend Keiser University for a degree in culinary arts while working at Polo Grill. In 2015, I joined the Alinea team as a chef de partie before becoming a sous chef. While with Alinea, I traveled to Dallas, Madrid, Miami and New York before relaunching Alinea -- and maintaining its three-star Michelin rating and No. 6 world ranking. -
