A traditional dum cooking process pioneered by the great chefs of Hyderabad Nawab’s, where meats or vegetables were marinated in spices and placed in the bottom of a thick wide pan, above which layers of half-cooked basmati rice were placed. Tightly closed with a lid and edges are packed with the dough to keep the steam from leaving while the dish cooked slowly. Burning charcoal on the top of the lid infused the rice with a smoky Flavor making food to Dum.
‘Dum’ cooking essentially involves the slow heat was given from top and bottom of the pot together and the moisture from the meats are used to cook the meat itself along with the rice and spices retaining its flavors to core without adding any additional water.
