There is something energizing and very refreshing about the new year that prompts some to make “New Year’s Resolutions.” So, The Athenaeum takes its cue from this to start another year with new events along with the traditions that have been in place for years. Thus, we continue with our tradition of honoring Robert Burns, the Scottish poet, on Friday, January 27. Acting as Chairman for the fourth year is Dr. Neil McLeod. His story telling on the life and loves of Robert Burns will surely regale us through the evening. And, the evening will not be complete without the haggis, the much loved and reviled “chieftain of the sausage race.” Jose Concepcion Ramirez-Nava was hired at The Athenaeum in the summer of 2006 Scotch, one of our most popular wines and spirits tasting events, is taking a new twist to as a part-time server. Stamp credit is only permitted for club visits from January 1st, 2011 through December 31st, 2011. 2 Executive Chef Kevin’s Recipe Corner Persimmon Pudding with Hard Sauce

Ingredients Directions ½ cup (1 stick) unsalted butter, softened, plus extra for the pudding mold 1. In a large bowl, cream together the butter and sugar with an electric mixer at medium 1 cup sugar speed. Add the flour, ½ cup at a time, alternating with the persimmon pulp, brandy, 1 cup sifted all-purpose flour eggs, and baking soda mixture. Stir in the vanilla, spices, walnuts, and raisins and mix 1 cup persimmon pulp (from 2 to 3 ripe on low until the butter comes together, about 5 minutes. persimmons, peeled and seeded) 3 teaspoons brandy 2. Butter a Bundt cake mold and spoon in the mixture. Cover the mold tightly with 2 large eggs, slightly beaten aluminum foil and put the mold in another pan and fill with water so that the water 2 teaspoons baking soda mixed with 2 comes up half way on the mold. Place in a 350 degree oven for approximately 1 hour teaspoons warm water or when a toothpick inserted comes out clean. Make sure the water doesn't evaporate; ½ teaspoon pure vanilla extract add more hot water if it does. Take the cake out of the water and let rest for at least ½ teaspoon ground cinnamon 15 minutes, gently unmold. 1 teaspoon ground ginger 1 teaspoon ground cloves 3. While the pudding is steaming, prepare the hard sauce. Cream the butter and sugar ½ cup chopped walnuts together with an electric mixer. Beat in the brandy. Serve with the warm pudding. 1 cup golden raisins
