    JFS: Food Engineering and Physical Properties Effect of Degree of Starch Gelatinization on Quality Attributes of Fried Tortilla Chips M.L. KAWAS AND R.G. MOREIRA ABSTRACT: The effect of degree of starch gelatinization on the quality attributes of tortilla chips was studied. Three different samples were prepared: control (45% of starch gelatinized before frying), freeze-dried (5% of starch gelati- nized before frying), and steamed-baked tortilla chips (87% starch gelatinized before frying). Compared to the control chips, the steamed-baked tortillas produced chips with lower oil content. They shrunk the most and showed a high degree of puffiness and lower crunchiness. Their texture was harder and not very crunchy. The majority of the oil in these chips was located at the surface. The freeze-dried tortilla yielded chips with high oil content. The texture was soft, and the porosity was very low, providing unacceptable characteristics in tortilla chips.     Complete On-site Food Service For Your Chapter House How It Works We hire and train cooks to work on-site at your location during times of operation. These cooks are trained in our methods and our menus, and will work with you to fine tune the menu items to fit your chapter’s needs. We receive all deliveries of food on site at your chapter house. All food is made fresh and comes immediately from the oven to the plate or the buffet —there is no transportation time for the food, which allows for the highest quality. In addition to the regular meals, we offer soda (or juice) and salad bar service. A fully stocked salad and sandwich bar with 24 items is available for lunch and dinner. It includes lettuce, assorted vegetables and salad dressing, croutons, cheese, sour cream, and salsa. It also includes deli meats and spreads, allowing members to make sandwiches if they want something different. The soda fountain is available at all times. If your chapter owns a soda fountain, we will assume the costs associated with maintaining it and keeping the stock of CO2. If you do not own a fountain, we will assume the costs of monthly rental, maintenance, and CO2. Lunch: Monday-Friday 11:30am-1:30pm Lunch is served over 2-hour window of time, allowing maximum compatibility with class schedules. Our menus are designed for individual short-order cooking.     Chicken Cordon Bleu Is An American Dish Annually observed on April 4 is National Chicken Cordon Bleu Day. It is all about a special dish combining chicken, ham and cheese. The French term Cordon Bleu is translated as “Blue Ribbon”. This dish is a take on the popular Veal Cordon Bleu. It is a flattened chicken breast which is wrapped around ham (or sometimes prosciutto or Canadian bacon) and cheese such as Swiss or Gruyere. The chicken is held together with toothpicks and dipped in an egg wash and breaded. The earliest recipe we were able to find was in a March 1964 printing of the Cincinnati Enquirer by the Cincinnati Gourmet Stanley Demos. Despite some misconceptions, it is an American dish. Demos mentions in his column that he got the idea to try chicken instead of veal “to be different.” It has been a popular dish since. Another use of the phrase “Cordon Bleu” comes from a distinguished order of sixteenth-century French knights, who apparently wore blue sashes and were therefore popularly referred to as the “Cordon-bleus.” Cordon Bleu is a thinly pounded piece of meat (most often chicken, but also veal or pork) stuffed with ham and cheese, then breaded and fried. Common variations on this recipe include baking instead of frying, skipping the breading, and switching the order of the meats. The term “Cordon Bleu” (by itself) relates to a special order of French knights (originally a wide blue ribbon worn by members of the highest order of knighthood). The earliest reference to veal cordon bleu in The Los Angeles Times was published in 1958.
