Banana Split

Banana Split Serves 3 to 4

Ingredients

For the fried : 3 tablespoons unsalted butter 2 tablespoons light brown sugar 3 not-too-ripe bananas, peeled and sliced into 1-inch pieces Pinch ground cinnamon Pinch sea salt 1/4 cup dark rum Splash orange liqueur, like Cointreau For the banana split: Mini Waffles 3 scoops ice cream

For the toppings: Butterscotch sauce Strawberry sauce sauce Whipped cream in a can and/or freshly whipped cream Gummy bears Swedish fish Peanut butter pretzels Cake pieces Sprinkles Luxardo cherries Toasted pecans Walnuts in syrup

Directions

1. Make the fried bananas: In a large skillet over medium heat, melt butter. Add brown sugar and stir to combine. Once dissolved, add bananas and stir to coat. Cook until beginning to brown, about 1 to 2 minutes. Add cinnamon and salt.

2. Carefully add dark rum – you may want to do this off the heat – and carefully flambé, gently swirling the pan to ignite the rum. Once the alcohol burns off, add the orange liqueur and swirl to coat the bananas. Let cook another minute and then remove from heat. Serve immediately with sauce.

3. Make the banana split: In a banana boat, place a mini banana bread waffle. Top with ice cream, fried bananas, and a variety of toppings. Finish with another banana bread waffle on the side.
