    Sea Scallops with Capers-Ground Cherries-Browned Butter Sauteed Eggplant, Carmen Peppers & Gold Cipollini Onions Featuring a Celebration of Tomatoes! Sea Scallops 2 ounces Clarified butter Sea salt (pinch) Fresh ground white pepper (pinch) 3 ounces ground cherries cleaned and cut in half 1 tablespoon capers 2 tablespoons Whole butter Lemon In a medium size pan over medium high heat put the clarified butter. Season the scallops with salt and pepper on both sides. Place the scallops into a hot pan about an inch apart. Allow to sear until golden brown. Turn the scallops over and sear on the other side. Add more oil if necessary. Season the eggplant generously with salt and pepper. Add the onions and continue to sauté. Reduce the heat. Stir frequently.     Calming Color Visualization To begin, make yourself comfortable. Adjust your clothing as needed and assume a comfortable position. First, before the calming color relaxation begins, notice how your body feels in this moment. Passively pay attention to the state of your body right now. Do not try to change anything, simply notice how your body and mind feel. Feel your body begin to relax slightly, as your shoulders drop a little lower.... your jaw loosens so your teeth are not touching.... and your eyelids start to feel heavy. Take a deep breath in.... hold it.... and slowly breathe out.... Now just notice your breathing. Your body knows how much air you need. Notice with interest how your breath goes in and out. Feel the pause after you inhale and before you exhale.... and the pause before drawing another breath. Allow your body to relax and your mind to focus on the calming color relaxation. Allow the relaxation to occur naturally.... allow and observe.... Create a picture in your mind of the color red. Imagine red of all shades....You might picture red objects, a red landscape, or just a solid color.....Imagine all of the different tones of red.... roses.... bricks.... apples....sunset....Enjoy the color red.     UC Davis, Vegetable Research and Information Center Home Vegetable Gardening Eggplant (Solanum melongena) Recommended Varieties Disease Resistance Black Beauty Epic TMV Early Bird (very early producer) Dusky TMV Imperial TMV Oriental type lchaban Tycoon White Easter Egg The standard eggplant produces egg-shaped, glossy, purple-black fruit 7 to 10 inches long when fully mature. Only a few plants are needed to meet the average family's needs. The long, slender Japanese eggplant has a thinner skin and more delicate flavor. Both standard and miniature eggplants can be grown successfully in containers, but standard varieties yield a better crop. White, ornamental varieties are available and edible but are of poor eating quality. Plant and handle eggplant in the same way as tomatoes; eggplant is slightly more sensitive to cold than tomatoes. Warm to hot weather throughout the season is necessary for good production. Seeds germinate quickly at 700 to 900 F, and plants should be grown for 8 to 9 weeks before setting them out. Cold temperatures will stop plant and root growth, reducing plant vigor and yields. Using hot caps or row covers protects plants from cold conditions. Though eggplants do well in hot weather, they must have well-drained soil and do not thrive in very humid areas. Pick fruits when they are about 4 to 6 inches in diameter. Test for maturity by pressing with the thumb. If the flesh springs back, the fruit is green; if it does not and an indentation remains, the fruit is mature. Harvest when the fruit is about halfway between these stages.

For more information, please contact [email protected]. 2013 Eggplant Variety Trial The number of eggplant varieties available to market growers has increased dramatically in recent years. While standard black Italian-style eggplants still dominate the wholesale market, the direct retail market now includes a wide range of shapes and sizes, and all shades of purple as well as black and white. A survey of the seed catalogs targeting commercial growers in New England shows 65 distinct eggplant varieties available for 2014. In 2013 we trialed 9 varieties at the Gardiner Crops Research farm at URI.     Crop Profile for Eggplant in New Jersey Production Facts • New Jersey ranks either third (2001) or fourth (2000) in United States eggplant production (24). • New Jersey supplies 12 to 14% of the total US eggplant production. • Production has changed little since 1995 with acreage varying between 800 and 1000 acres, while crop value has increased from $2.22 million (1995) to $4.68 million (2002) (24). • Yields average 20,000 to 25,000 pounds per acre with a total production of between 16,000,000 and 20,000,000 pounds. Prices received by growers rank sixth and seventh in the United States with growers receiving between $0.11 and $0.23 per pound (23). • During the 1998-99 production season in southern New Jersey the operating costs per acre were estimated at $3,934 and total cost including harvesting was $3.19 to $4.06 per box depending on yield (14). • All eggplant production is for the fresh market. • New Jersey’s production season runs from July to early October with largest supply available in August and September. Production Regions The majority of eggplant production is located in southern New Jersey in the counties of Gloucester, Cumberland, Salem and Atlantic. There are smaller production areas in Monmouth and Burlington counties. Production is mainly for the wholesale fresh market trade for shipment to the eastern United States and Canada depending on the time of year. A small volume of eggplant is produced in the northern part of the state for roadside and green markets.
