The evening is filled with twinkling lights and beautiful Gulf Coast sunsets. 4 HARVEST WINE & FOOD FESTIVAL AL FRESCO RESERVE TASTING CULINARY PROFILES David Bancroft Acre Restaurant, Bow & Arrow | Auburn, AL David Bancroft is Chef and Owner of Acre Restaurant and Bow & Arrow in Auburn, Alabama. Born in Alabama and raised in San Antonio, TX, David Bancroft’s passion for food began at an early age. Bancroft was heavily influenced by his grandparent’s cooking & farming practices, particularly drawing knowledge and inspiration from his grandfather who farmed cattle, catfish, cotton and peanuts in South Alabama. Bancroft grew up eating some of the best cuisine the South has to offer and parlayed his love of food & farming into a passion for cooking, inspired by his family’s approach to home-style dining. Bancroft opened Acre restaurant with his wife, Christin in August 2013. Situated on a full acre of land, Acre reinterprets the rich heritage of Alabama cuisine. A 2016, 2017, 2018, and 2019 semifinalist for the James Beard Foundation’s “Best Chef: South” award and winner of Food Network’s “Iron Chef Showdown” competition in 2017, Bancroft opened his second restaurant concept in Auburn, Bow & Arrow, in November 2018. Rusty Bowers The Chop Shop, Pine Street Market | Atlanta, GA Rusty Bowers is the owner, chief butcher and charcutier of Pine Street Market, a whole animal craft butcher shop, and co-owner of Chop Shop, Atlanta’s first butcher and farmer-owned high-end retail store. A graduate of the renowned Culinary Institute of America, Rusty began his career as a classically-trained chef. In 2008, Rusty traded his chef’s coat for a butcher’s apron and launched Pine Street Market, a whole animal butcher shop specializing in the finest quality charcuterie, artisan sausages, and a variety of fresh cuts of locally-sourced, humanely and sustainably raised pork, beef, lamb and poultry hand-crafted in small batches. After nearly a decade of growing Pine Street Market into a trusted source of humanely and ethically raised foods for the local community, Bowers had a vision of teaming up with a local farmer to improve access to the finest quality artisan meats, farm fresh produce, and heritage grains. In 2016, Bowers began working with Charlotte and Wes Swancy of Riverview Farms in Ranger, Georgia to launch Chop Shop – Atlanta’s first butcher and farmer-owned high-end retail store, which opened in February 2019. Chop Shop offers heritage and artisan meats, farm fresh produce, hand-crafted cheeses, heritage grains, and a wide variety of specialty provisions, including brines, rubs, oils and much more. 6 HARVEST WINE & FOOD FESTIVAL Hugh Acheson 5 & 10 | Athens, GA Hugh Acheson is a chef and food writer who lives in Athens, GA. He is the co-owner / partner of the Athens, Georgia, restaurant 5&10, Atlanta restaurant Empire State South, as well as Atlanta coffee shop Spiller Park Coffee. His cookbook, A NEW TURN in the SOUTH won the award for Best Cookbook in the field of “American Cooking” by the James Beard Foundation in 2012. His second cookbook PICK a PICKLE, and his third, THE BROAD FORK, was released in the spring of 2015. His fourth cookbook, THE CHEF & THE SLOW COOKER, was released in the fall of 2017. Food & Wine Magazine named him Best New Chef way back in 2002 and the James Beard Foundation awarded him Best Chef Southeast in 2012. Hugh competed in Bravo’s Top Chef Masters, Season 3 and starred as a judge on Top Chef, Seasons 9 thru 13. Hugh currently has his own podcast, Hugh Acheson Stirs the Pot. He sits down with food personalities, entertainers and activists in restaurants and at kitchen tables across the country to talk about what they’re eating and what’s eating them. The first episode dropped on February 6th of this year. Kristen Farmer Hall The Essential | Birmingham, GA Kristen Farmer Hall is the Executive Pastry Chef and Co-Owner of The Essential in Birmingham, Alabama. Her work pursues the balance of modern technique with nostalgic sentiments, creating pastries and desserts that are new, yet feel familiar. Kaley Laird The Rhu, Rhubarb, Benne on Eagle | Asheville, NC Accomplished Pastry Chef Kaley Laird brings her unique style and non-traditional culinary methods to the kitchen at Rhubarb. At just 31 years old, Laird boasts an impressive resume with more than 13 years of culinary experience. Originally from Western New York, Laird’s interest in cooking was sparked as a young child decorating Christmas cookies with her mother. What began as a holiday tradition developed into a passion that allows Laird to combine her interests in math, science, art and business. Laird honed her pastry skills at the Culinary Institute of America, Hyde Park Campus and graduated with an AOS Baking and Pastry Arts in 2007. Laird is a classically trained French pastry chef with a distinct edge. She utilizes her experience with savory ingredients to broaden her repertoire of flavor combinations to create distinctly unique desserts using local, fresh and seasonal ingredients. Laird’s motto is “Flavor first. Just because a dish isn’t traditional, doesn’t mean it won’t be amazing.” Pat Pascarella The While Bull | Decatur, GA Pat Pascarella helms the kitchen at The White Bull as Executive Chef and Partner. With a name inspired by literary icon Ernest Hemingway, who referred to the blank page as “the white bull,” the restaurant showcases a thoughtful menu of simple, farm-forward fare prepared with ingredients sourced exclusively from Georgia farmers and purveyors. Dishes are defined by the ingredients available rather than a specific cuisine, and the menu showcases an elevated, yet approachable selection. Since opening on the Decatur Square in March 2018, The White Bull has been named ‘Best New Restaurant’ by Creative Loafing, ‘Best Farm-to-Table Restaurant’ by Atlanta Magazine, among “Atlanta’s Best New Restaurants of 2018” by Thrillist -- and as of 2019, ’75 Best Restaurants in Atlanta’ by Atlanta Magazine, and ‘2019 Chefs to Watch’ by Dining Out Magazine.
