Kath- erine Theodorou was born and raised in Glen Cove where she resides with her parents (John and Jane) and her 3 broth- ers. She attended Glen Cove Schools and went on to Saint Anselm College in New Hampshire where she played 4 years of Varsity Softball and earned a Bachelor’s degree in Physics. Katy is a certified EMT and currently volunteers for the Glen Cove EMS. Matthew Gillespie and his wife Katherine live in Glen Cove. He earned a Bachelor’s degree in History at Marist College. He earned a Masters Degree at Columbia University in NYC in Edu- cation. He is also a certified New York State Emergency Medical Technician. Glen Cove Police Chief William Whitton said, “The police department has had many retirements over the past two years. The check will be donated to the students’ charity of choice, the North Shore INN. The school also received $500 for furtherance of its fundraising activities. In its fifth year, Charity Champions promotes volunteer- ism and helps raise money for a school- selected charity. A grand-prize winner from participating schools in each of the six tri-state regions that Cablevision serves will be selected in the spring and awarded $5000 for their school’s chosen charity. Sea Cliff Fire Department is usher- ing in the holidays with several annual events including the Children's party, where Santa gave each young child a present along with entertainment, the annual department party highlighted by a power point production put together by Jaime Vitale featuring many past and present firefighters and fire depart- ment activities and the annual Santa run through Sea Cliff, where Santa and his helpers drive through the Village and greet local residents and their children. -Carol Griffin

North Shore Schools, December 19, 2013 - 11th and 12th grade students in Teresa Paolilli-Schiano’s Baking Class at North Shore High School had the chance to explore various ways to make Ginger- bread Houses and cookies this holiday season. By utilizing molds and cookie cutters, students created Gingerbread Houses from scratch by baking ginger bread, tempering chocolate and graham crackers! Additionally, they studied dif- ferent types of icing that varied in tex- ture. They used merengue powder or egg whites to create Royal icing that was used to decorate their houses along with candy! Earlier in the year, they learned that buttercream icing tends to be soft in texture and are now learning the prop- erties of the Royal icing that is stiffer. Besides their traditional holiday houses, our young bakers used chocolate wafers to produce chocolate gingerbread hous- es. These delicious, holiday treats were favorably shared with their friends and faculty at North Shore!
