Over the years it as become a valuable summertime companion for longtime residents as well as newcomers and visitors to our area. This year again, with things being uncertain, we are continuing to provide the Guide to you online only. We have included as much information as we can, but also know that again this year everything is very fluid. I usually melt the cheese before adding so it mixes in more thoroughly. You can also use onion & chive flavored cream cheese instead of plain. INGREDIENTS • 2 cups frozen corn • 2 tablespoons butter or 2 tablespoons • 1 garlic clove, minced margarine, cubed • 4 ounces cream cheese, cubed DIRECTIONS • Preheat oven to 350 degrees. • Mix all ingredients together in small mixing bowl. • Pour into a greased 3 cup baking dish • Bake uncovered for 20-25 minutes until bubbling around edges. • Serve hot! I’ve always been told this is very similar to the signature salad at Clinkerdagger’s in Spokane! You can easily double or triple or even quadruple the recipe. She says Colfax shared one of her delicious recipes with us. some of her favorite desserts have a little bit of alcohol in them. This Tequila Fruit Salad is 1 1/2 lbs carrots, peeled and each cut into 4 the perfect dessert for summer, when the fruit 2 cloves garlic, peeled is naturally sweet and you want something 1/4 cup extra virgin olive oil chilled and light after a delicious meal. 3 Tbsp red wine vinegar 1 tsp hot Hungarian paprika INGREDIENTS 1/4 tsp chili powder 2 cups strawberries (halved, hulled) 1/4 tsp ground cumin 2 cups mango (diced) 1 tsp ground coriander 1 tablespoon coconut sugar 2 habinaro peppers 2 tablespoons lime juice 2 tablespoons tequila Cilantro (coriander) & mint springs for serving 1 tablespoon triple sec Flat bread, for serving 1 tablespoon mint (chopped) Place carrots and garlic in a saucepan and cover with salted water. Bring to a boil and INSTRUCTIONS cook for 10 minutes, until tender. In large bowl, combine strawberries, mango, Drain well. sugar, lime juice, tequila, triple sec, and mint. Brownies: 3/4 cup all-purpose flour 3/4 cup white sugar 1/2 cup unsalted butter, softened 1/2 teaspoon sea salt 3 eggs 2 tablespoons lemon juice 1 tablespoon lemon zest, plus more for icing

Icing: 1 cup confectioners’ sugar 1/4 cup lemon juice 1/4 teaspoon vanilla extract

Step 1: Preheat oven to 350 degrees F. Grease an 8-inch square baking dish.

Step 2: Beat flour, white sugar, butter, and sea salt together in a bowl using an electric mixer until well mixed. Whisk eggs, 2 tablespoons lemon juice, and 1 tablespoon lemon zest together in a separate bowl; mix into flour mixture and beat on medium speed until smooth, about 3 minutes. Pour batter into the prepared baking dish.

Step 3: Bake in the preheated oven until a toothpick inserted in the center comes out clean, 23 to 25 minutes. Cool until bottom of dish is warm to the touch.

Step 4: Whisk confectioners’ sugar, 1/4 cup lemon juice, vanilla extract, and lemon zest (to taste) together in a bowl until smooth; spread over brownies.

Cook’s Notes: These are fun cut into bite-sized squares. Be sure not to bake too long, they can turn out dry. They are already more cake-like than a traditional brownie.

4 sandwich rolls or burger buns 1/4 cup olive oil 1 cup arugula divided For the mayonnaise: in a small bowl, mix together mayonnaise, garlic, and basil set aside. For the burgers: preheat a gas or charcoal grill or place a grill pan over medium-high heat. In a large bowl, add the ground chicken, salt, pepper, and 1/2 of the mayonnaise mixture. Gently combine the ingredients and form the chicken mixture into 4 patties. Place the burgers on the grill and cook for about 7 minutes on each side. Transfer to paper towels and let rest for a few minutes. Brush the cut side of each roll with the olive oil and 1 tsp of the mayonnaise mixture. Grill for 1 to 2 minutes until slightly golden. To assemble the burgers: spread a dollop of the remaining mayonnaise mixture on the tops and bottoms for the toasted buns. Place the chicken burgers on the bottom halves of the buns. Caribe Hilton is the birth place of the popular tropical drink Piña Colada! Ramón “Monchito” Marrero was the creator of the Piña Colada in 1954, during his time as a bartender at their resort. After three months of experimentation, Mr. Marrero finally settled on the recipe Piña Colada, which he felt captured the true flavors of . He continued to serve the beverage at the Caribe Hilton for the 35 years following its creation and was rewarded for his efforts in 1978 when Puerto Rico named the cocktail its national drink. 2 oz rum 1 oz coconut cream 1 oz heavy cream 6 oz fresh pineapple juice 1/2 cup crushed ice Mix rum, cream of coconut, heavy cream and pineapple juice in a blender. CINNAMON CRACK CAKE RECIPE Susan Weed, co-owner and amazing baker shared this delicious Cinnamon Crack Cake recipe that she came across. It is spiced with cinnamon and topped with a rich butter sauce. CAKE BUTTER GLAZE 15.25 ounce cake mix yellow 1/3 cup butter 3.4 ounce instant pudding vanilla 3/4 cup granulated sugar 1/4 cup brown sugar packed 3 tablespoons water 1/4 cup granulated sugar 2 teaspoons vanilla 2 teaspoons ground cinnamon 4 large eggs at room temperature 3/4 cup water 1/4 cup vegetable oil 1/2 cup buttermilk whole milk, water, or white wine CAKE 1. Preheat oven to 350 and grease a bundt pan generously with solid vegetable shortening then dust with flour or granulated sugar or coat with Wilton cake release. Set aside. 2. In the bowl of your electric mixer, add cake mix, vanilla pudding, sugars, and cinnamon. Stir to combine. 3. Add eggs, water, oil, and buttermilk and mix well. 4. Pour into prepared pan. 5. Bake for 45 to 50 minutes or until a wooden pick inserted in center comes out clean or with dry crumbs. 6. Remove the cake from the oven and set aside while making the sauce.

Remove the pan from the heat and stir in the vanilla. 3. Pour mixture over warm cake and let set before inverting the cake onto a serving plate 4. This cake is great served warm with vanilla ice cream. Store in an airtight container in the refrigerator for 5 days.

Drain pineapple, reserve all juice. 2. In a small bowl, combine all your fruit. I always squirt some lemon juice over my bananas before adding so they don’t get brown and yucky looking. Set aside. 3. In a small saucepan, combine the sugar, cornstarch, and reserved pineapple juice. Bring to a boil. Reduce heat, and simmer till thickened. Remove from heat and add the marmalade or preserves and the lemon juice. 4. Let cool for a couple of minutes, then pour the glaze over your fruit and toss gently to coat.

Tacos in a Bag Danielle Kallaher in the front office of the radio station shared this perfect recipe for on the go families. These are perfect to take to the ball park, for lunches, camping, or just a fun dinner.

You will need the toppings of your choice like onions, cheese, sour cream, salsa, lettuce, tomatos, or whatever you like on your tacos.

Open the bag of chips and add in your toppings, and eat with a fork. 44 Taco Lasagna with Tortillas Margo Balzarini got this recipe from Diana King of the Whitman Samplers Quilt Guild. It is a quick and easy casserole that is sooooo delicious. 1 pound lean ground beef 1 15oz can black beans, rinsed and 1 Tbsp olive oil drained 1/2 small yellow onion, grated or finely 1 1/2 cup frozen sweet corn chopped 1 4oz can fire roasted,diced green chilies 2 tsp smoked paprika 1 10oz can enchilada sauce 1 tsp cumin 12 8” large flour tortillas 1 Tbsp chili powder 8oz shredded Pepperjack cheese 1 tsp kosher salt 4oz shredded Colby Jack cheese 1/2 tsp black pepper 6oz can sliced black olives, drained 1 14.5oz can fire roasted, diced tomatoes 2 scallions, finely chopped 2 Tbsp chopped cilantro Preheat oven to 425° 1. Drizzle olive oil into a large skillet over medium high heat. Add beef, onion, paprika, cumin, chili powder, salt and pepper. Brown mixture for about 5-7 minutes. Add tomatoes, beans and corn. Stir. Allow to cook while you begin preparing the baking pan. 2. Smooth about 1/3 of the enchilada sauce over the bottom of a 9 x 13 baking pan. Lay tortillas on the bottom of the pan, slightly overlapping until pan is covered (about 4 tortillas). 3. Spoon half of the beef mixture over top of the tortillas, spread evenly. Layer tortillas on top of beef mixture. Smooth about 1/3 of the enchilada sauce over the tortillas. Sprinkle 1/2 of each of the cheeses on top. Scatter the green chilies over the cheese. Add the remaining beef mixture and spread evenly. Layer tortillas on top. Spoon the remaining enchilada sauce over the tortillas. Sprinkle the remaining cheese and garnish with olives and scallions. 4. Bake for 10-15 minutes, until cheese is melted and lasagna is warmed through. Remove from oven and sprinkle with cilantro. 5. Serve and enjoy.

Cowboy Caviar This is a very light and summery dish that was shared by Danielle Kallaher, Pullman Radio office manager. 1/2 cup olive oil 15 ounces black beans, drained and rinsed 1/4 cup granulated sugar or to taste 11 ounces sweet corn 1/4 cup white wine vinegar 1 red onion, diced 1 tsp chili powder 1 green bell pepper, diced 1 tsp salt 1 red bell pepper, diced 1 lb Roma tomatoes, seeded and diced 1 cup fresh cilantro or fresh parsley, 1 (15-ounce) can black-eye peas, drained chopped and rinsed In a large bowl, whisk together the olive oil, sugar, white wine vinegar, chili powder, and salt. Add tomatoes, black-eyed peas, beans, corn, red onion, and bell peppers. Stir to combine. Stir in cilantro. Cover and chill until serving time. Serve with tortilla chips.

He found it on Mommy’s Home Cooking website. This skillet dinner is easy, versatile, and delicious. Steve and Margo wrap it in a tortilla, but it is equally as good without.

7 oz cured chorizo sausage, cut into slices ½ cup onion, chopped ½ cup bell pepper, any color, diced 3 garlic cloves, minced 1 cup white rice, uncooked 1 10 oz can RoTel tomatoes with green chilies, undrained 1 cup sweet corn, drained and rinsed 2 cups vegetable broth 1 cup shredded cheddar and Monterey jack cheese blend chopped cilantro , optional

Heat a large skillet over medium-high heat. Add chorizo and cook for 3 minutes, stirring occasionally. Add onion, pepper, and garlic; cook 5 minutes more or, until vegetables are fragrant and tender. Stir in the rice and let it toast for 2 minutes, stirring constantly. Add RoTel tomatoes, corn, back beans and vegetable broth; mix to combine. Bring to a boil. Let it cook uncovered, over medium heat, until most of the liquid has evaporated. Then cover, reduce heat to low and cook 10-15 minutes or until rice is tender. Sprinkle the cheese on top, cover and cook for 1-2 more minutes, or until the cheese is melted. Garnish with cilantro, if desired. A dollop of sour cream is also delicious. Serve. In History. End of Story. Rod Schwartz from the Pullman Radio Sales team shared this recipe. (It’s not my recipe, but one that I’ve made with great success. Made ‘em for Paula on Mother’s Day and she called them “the best we’ve ever had.” The recipe comes from The Modern Proper. Before these scallops hit the grill, we give them a quick marinade in a combination of: Olive oil Garlic Honey Pimentón (Spanish smoked paprika) Lemon juice

1. Marinate the scallops for an hour in the fridge. Don’t let them marinate more than an hour— if you’ve got to err, err on the side of less than an hour rather than more. 2. Skewer the scallops! 4-5 scallops per skewer. Work somewhat quickly—the scallops will be easier to grill if they’re still cold from the fridge. 3. Grill the scallops! Brush the grill with oil first, then lay the skewered scallops on the grill. On a nice, hot grill, they will take 2-3 minutes per side. If you’re feeling unsure, you can always slice one open to check for doneness. 4. Eat the scallops! The best part! 20 Sea scallops, large 2 tsp Smoked paprika 1/4 cupOlive oil, plus more for grill 1 tspSalt 1 TbspHoney 4-5 Skewers (if using wooden, presoaked in 2 TbspLemon juice warm water for 1 hour) 2 Garlic cloves, minced Salt and pepper to taste Method 1. In a small bowl, combine 1/4 cup of olive oil, honey, lemon juice, garlic, smoked paprika and salt. Whisk until honey dissolves. Set aside. 2. Place the scallops and the marinade in a large ziplock bag, seal it shut & refrigerate for 1 hour 3. If you are using wooden skewers, soak them in warm water for the hour that the scallops are marinating. 4. Heat grill to medium-high heat. Cover the grill so the grates get hot. 5. Remove the scallops from the refrigerator, slide 4-5 each onto the skewers and season with salt and pepper. 6. Using a silicone brush, oil the grill grates with extra oil. 7. Place the skewered scallops on the grill at an angle (if you want pretty diagonal grill marks). 8. She says it is just as good as what you get at the restaurant. 1 Tbsp olive oil 1 lb ground chicken (try a mix of light and dark chicken meat) 2 gloves garlic, minced 1 onion, diced 1/4 cup plus 1 Tbsp hoisin sauce 1 Tbsp reduced-sodium soy sauce 1 Tbsp rice wine vinegar 1/8 tsp freshly grated ginger 1 Tbsp Marie Sharps sauce, plus more to taste 1 (8oz) can whole water chestnuts, drained and diced 2 green onions, thinly sliced Freshly ground pepper, to taste 2 heads butter lettuce, cores removed to separate the leaves 1. Heat the olive oil in a large skillet over medium-high heat. Add the ground chicken, and cook until browned, about 6 minutes making sure to crumble the chicken as it cooks; drain off the excess fat, if any. 2. Stir the garlic, onion, hoisin sauce, soy sauce, vinegar, ginger, and Marie Sharps into the chicken; cook over medium-high heat until the onions have become translucent, 1 to 2 minutes. Stir in the water chestnuts and green onions, and cook until tender, 1 to 2 minutes; season with pepper to taste. 3. To serve, spoon several tablespoons of the chicken mixture in to the center of each lettuce leaf, taco style. 72
