Over the years it as become a valuable summertime companion for longtime residents as well as newcomers and visitors to our area. This year again, with things being uncertain, we are continuing to provide the Guide to you online only. We have included as much information as we can, but also know that again this year everything is very fluid. We hope that many acitvities in our Guide are able to still take place, and that many other activities will be able to happen. I usually melt the cheese before adding so it mixes in more thoroughly. You can also use onion & chive flavored cream cheese instead of plain. INGREDIENTS • 2 cups frozen corn • 2 tablespoons butter or 2 tablespoons • 1 garlic clove, minced margarine, cubed • 4 ounces cream cheese, cubed DIRECTIONS • Preheat oven to 350 degrees. • Mix all ingredients together in small mixing bowl. • Pour into a greased 3 cup baking dish • Bake uncovered for 20-25 minutes until bubbling around edges. • Serve hot! I’ve always been told this is very similar to the signature salad at Clinkerdagger’s in Spokane! You can easily double or triple or even quadruple the recipe.
