Surrounding the Champagne hubs of Epernay and Reims, the region produces around a million bottles of Champagne a day. A technique said to have been invented by Dom Pérignon in 1688, Champagne is made using the traditional method whereby a second fermentation is induced in the bottle, producing CO2 which becomes trapped, resulting in a sparkling wine. Champagne style wines are now replicated all over the world. These premium wines are usually made from a blend of grapes: Chardonnay to add fruit and elegance; the red grapes, Pinot Noir and Pinot Meunier, for body and backbone.
