Le Cordon Bleu Japan Launches Japanese Cuisine Diploma, Commences Recruitment for 2017 Autumn Term TOKYO, Mar. 21, 2017 In response to the increased international market growth in Japanese cuisine since the UNESCO recognition oF ‘washoku’ as an intangible cultural heritage, Le Cordon Bleu Japan is launching a Japanese cuisine diploma program. As a global leader in culinary and hospitality education, with a network of more than 35 institutions in over 20 countries, Le Cordon Bleu has drawn upon over 120 years of expertise to create this new program. This 4-level program covers a comprehensive range oF topics to provide students with a Full range of skills and knowledge relating to authentic Japanese cuisine. Students will embark on a journey to discover a whole new world oF technical skills, cooking methodologies, specialist ingredients, equipment and tableware applied to over 200 recipes in traditional, regional and modern Japanese cuisine. Each level oF the program is complemented by unique industry research activities and interactive learning experiences. These activities provide real-life insight into the deep culture and etiquette behind Japanese cuisine. Beard nurtured a genera- tion of American chefs and cookbook authors who have changed the way we eat. James Andrew Beard was born on May 5, 1903, in Portland, Oregon, to Elizabeth and John Beard. His mother, an independent English woman passionate about food, ran a boarding house. His father worked at Portland’s Customs House. The family spent summers at the beach at Gearhart, Oregon, fishing, gathering shellfish and wild berries, and cooking meals with whatever was caught. He studied briefly at Reed College in Portland in 1923, but was expelled. Reed claimed it was due to poor scholastic performance, but Beard maintained it was due to his homosexuality. Beard then went on the road with a theatrical troupe. He lived abroad for several years study- ing voice and theater but returned to the United States for good in 1927. Although he kept trying to break into the theater and movies, by 1935 he needed to supplement what was a very non-lucra- Biography tive career and began a catering business.
