Maundy Thursday at Home THURSDAY, APRIL 9, 2020

CHAPEL FRIENDS,

A lot happens on Maundy Thursday. We keep vigil at the of Repose, recalling Jesus’ hope that his friends in the garden of Gethsemane would, “stay awake with me,” as he prayed. We strip the Chapel of all ornamentation, remembering how Pilate’s soldiers mocked and stripped Jesus.

We wash each other’s feet, a powerful act of humility and love that Jesus did for his friends on this holy night. And we gather at table for an Agape Supper, a love feast, in honor of the Passover meal Jesus shared with his apostles in an upper room, during which Jesus instituted the Holy Eucharist.

Not being with our Chapel family on Maundy Thursday is very difficult. The washing of feet brings many folks to tears, often healing animosities between estranged friends. Stripping the altar is dramatic and frightening. But, at the Chapel of the Cross, the Agape Supper is a highlight of the year. Members of the Hospitality Committee prepare a Mediterranean dinner that is savored in silence until the choir sings the Servant Song, signaling the end of the evening.

This year, as we shelter in place to combat the corona virus, we want to share some recipes, prayers, and readings you could use to mark this holy night at home. BLESSINGS, SLOAN MCKELLAR TABBOULEH Agape Supper at Home from Ina Garten RECIPES 1 cup bulghur (or slightly undercooked quinoa, , farro, or brown rice) ROASTED VEGETABLES 1 1⁄2 cups boiling water from Ina Garten 1⁄4 cup freshly squeezed juice 1⁄4 cup extra virgin 3 pounds (7 to 8 medium) , cut into 1-inch rounds 3 1⁄2 teaspoons coarse salt, divided 2 red or yellow bell peppers, cut into 1-inch squares 1 bunch scallions, minced 1 medium red , cut into 1/2-inch wedges 1 bunch fresh mint leaves, chopped 2 tablespoons olive oil 1 bunch flat-leaf parsley, chopped 2 teaspoons coarse salt 1 hothouse cucumber, unpeeled, seeded, and medium-diced 1⁄2 teaspoons freshly cracked 2 cups cherry tomatoes, halved 1 teaspoon fresh cracked black pepper Preheat oven to 475F. Combine vegetables on a rimmed baking sheet; drizzle with olive oil, and season with . Toss to coat. (storebought or homemade, recipe to follow) juice of 1⁄2 lemon Mix all ingredients listed above cucumber until well combined. Place sliced cucumbers on coarse salt paper towels, salt lightly and let excess water drain from the cucumbers for 15 - 20 minutes. fresh cracked black pepper Toss with sauce and season to taste. Serve chilled as a side dish. 1⁄4 bunch parsley, chopped Prepare orzo according to package directions. Drain and run cool water over. Half tomatoes, roughly chop artichokes, crumble feta, and drain capers. Combine all with orzo. Add pesto, lemon juice, and parsley. Season to taste with salt and pepper. Chill or serve immediately.
