But what a difference a few months make. After the hugely successful La Paulee auction in March, the world changed. Our first concerns were for the health and well-being of our employees, the lifeblood of Zachys. While keeping everyone safe, we wanted to continue to do business, and that means bringing you amazing collections of the finest and rarest wines. And I’ve been reassured to see that the market is strong. We’ve got plenty of amazing wine to sell, and prices haven’t changed since the March auction. In the retail world at Zachys, business is up. And on May 8, in Hong Kong, we launched a concept we’ve wanted to test for a long time. For years, we’ve jokingly called it the “auction in a box.” An auctioneer on your computer, live-streamed from our office, with the same phone and absentee bidding, but with no room. Sorry, no steaks from Smith & Wollensky! I was there at 6:30am EST for this Hong Kong Evening Sale, and it was a success, and so we’re doing it again. For the vast majority of you who live outside of the New York area, this auction is no different from any other. For those used to joining us at a restaurant, you’ll have to stay home. One thing that is the same, though, is the amazing selection of rare wines on offer, all with excellent provenance. These are the highest-quality product you can buy. As I have said many times, “At Zachys, you can bid with confidence.” This sale is no different. Dozens of lots of DRC, Roumier, Rousseau, Coche-Dury, the best of Bordeaux from the “Big 8,” loads of lots of Le Pin, and one of the coolest collections of Madeira—dating back to the 18th-century—that I can remember seeing in one of our auctions. At the end of the auction, we are offering several “expe- riential” lots from organizations that have had their charity fundraisers cancelled due to Covid-19. For a trip to Napa or a private chef in your home (valid until the end of 2021) these lots are some of the rarest in the catalog, and I’m delighted to say we won’t be charging a buyer’s premium, so you can make your winning bid a donation to one of these 501(c)(3) organizations. In the past 75 years, Zachys has seen a lot of changes. The one common thread that has run through the business is our commitment to our employees, and to fine wine.     DOMAINE DUJAC Clos Saint Denis 1970 - 2004 by Neal Martin March 2020 By Neal Martin | March 31, 2020 Walking back from a dinner last year, a friend asked if I was aware of the current market price for mature bottles of Domaine Dujac. “No,” I replied. All I knew was that they are beyond my budget. He whipped out his smartphone and dug up the price for a 1990 Clos de la Roche. I was gobsmacked – it was a cool £5,000 per bottle. Of course I am inured to the escalation in Burgundy prices in recent years, but even so, I found it staggering how much 750ml of Pinot Noir could cost. Then I remembered a bacchanal in Paris the previous January with a gaggle of high-rolling, wine-loving friends vowing serious damage to Tour d’Argent’s astonishing wine list. Jeremy Seysses joined us for a dinner that ranks among the greatest in my life, one where my already lofty estimation of Dujac went up a few notches. It was not Clos de la Roche that blew my mind but mature vintages of Clos Saint-Denis. I confess to an ardent passion for this vineyard, one shared by a number of winemakers, though it seems to lie unfairly in the shadow of Clos de la Roche within the context of Morey-Saint-Denis. So, when I was invited to a vertical of Dujac’s Clos Saint-Denis in London last April, there was no way I was going to miss it. This vertical tasting was organized by collector Jordi Orriols-Gil and took place at Hide restaurant in central London, with around fifteen Burgundy lovers in attendance.

    MAISON PASCAL CLEMENT GEVREY-CHAMBERTIN “LES EVOCELLES” 2015 PASCAL CLEMENT || Pascal Clement was born in the village of Savigny-les-Beaune to a family of growers, where his father founded the Maison in 1950. After over 20 years as a grower and winemaker in the region – including his time at legendary Domaine Coche-Dury in Meursault - he launched his own micro-négoçiant project in 2012. The wines live in a stunning building built in 1850 with a splendid arched cellar, housing 200 barrels. Pascal works with fifteen farmers / vineyard owners with vineyard holdings across Burgundy, personally selecting and tending the plots he chooses to work with. Pascal’s winemaking philosophy is very non-interventional. All the wines are fermented with native yeasts and undergo malolactic naturally (depending on vintage). In 2016, a “salty” year, the whites all completed malo while in 2015, Pascal chose to halt malolactic. The wines rest in barrel with no lees stirring/ bâtonnage. For reds, Pascal prefers Rousseau barrels and whites are in Damy, Billon, and François Frères. Recently, Pascal started moving to larger 500L casks for aging, finding better balance of wood to wine compared to the 225L Burgundy barrels he had been using.   • Georges Lignier
    Georges Lignier Having been known as the U.S. importer for Hubert Lignier for over 30 years, in 2014 we expanded our connection to the Lignier name through another branch of the family. Georges Lignier is a cousin of Hubert, and while the two estates are clearly separate op- erations, they do share some of the greatest vineyards in and around Morey-Saint-Denis. The domaine is led by Benoit Stehly, nephew of Georges Lignier, who worked at the domaine for a decade alongside his uncle, before assuming control of the work in both the vineyard and the cellar in 2008. When it comes to the vineyard holdings, the depth of appellations in both the Premier and Grand Crus is astounding. Overall, the domaine counts sixteen hectares encompassing 50 parcels, across 17 appellations in both white and red. Moreover, these are generally not single rows of rare plots, but substantial parcels within some of the greatest sites in the Cote d’Or. For example, the estate is the largest proprietor of the Grand Cru Clos Saint-Denis, at 1.49 hectares, and controls over a hectare of the Clos de la Roche Grand Cru. Viticulture: • Farming: Lutte Raisonnée • Treatments: No herbicide; chemical treatments when needed • Ploughing: Occasional ploughing by lightweight tractor, but only when necessary. Instead, Benoît allows grass to grow between the rows, which naturally pushes the vine’s root system deeper into the bedrock. His is the only domaine in Morey that allows grass to grow freely in the vineyard. • Soils: Limestone-clay • Vines: Average 50 years old, young vines average 15 years old, all trained in Guyot.

    DOMAINE JEAN-BAPTISTE PONSOT Jean-Baptiste Ponsot farms a total 8.5 hectares in the Rully AOP with a deep respect for the land that his RULLY 1ER family has been fostering for three generations. He employs organic practices but hasn’t sought out “EN BAS DE VAUVRY” certification, preferring instead to prioritize the intrinsic health of the ecosystem and his vines. Domaine Ponsot’s holdings cover parts of three Rully premier crus in Burgundy: Molesme, Montpalais, and La Fosse.
