Thus far, literature examining the NSLP has focused on what foods are provided rather than what is actually eaten. Additionally, there is limited research on the socialization effects of school lunch and childhood foodways within a school setting. The ocs ialization of children during household mealtimes has been extensively studied, but these studies have been limited to the family dinner table. The purpose of this ethnographic study is to determine how children are socialized during school lunch and to examine the extent to which children understand health and nutrition. Semi-structured interviews were conducted with students from a middle school in northern New Jersey. The ap rticipants were also observed during various lunch periods in the school cafeteria. Faculty members and lunch service workers were also informally interviewed. The ad ta from the participant interviews and lunchroom observations was synthesized and the analysis of the data revealed common thematic elements: gender, nutritional discourse, commensality, and socialization mechanisms. During school lunch, children sit with students of their own gender, so male and female students are socialized differently. Observations indicate that female students are more likely to share food at the lunch table and male students are more physically active and are less likely to finish their meals. The interviews suggested that children have a basic and profound understanding of health and nutrition which is primarily learned at home. The bso ervations suggest that the mechanism of linguistic socialization deviates from the narrative structure described in the mealtime literature; children reinforce gender roles during lunch time conversations, but their conversations follow different narrative structures. In the context of the obesity crisis, this study reveals the importance of school lunch on socialization and its effects on students’ food choices.     30 Rock: Complexity, Metareferentiality and the Contemporary Quality Sitcom Katrin Horn When the sitcom 30 Rock first aired in 2006 on NBC, the odds were against a renewal for a second season. Not only was it pitched against another new show with the same “behind the scenes”-idea, namely the drama series Studio 60 on the Sunset Strip. 30 Rock’s often absurd storylines, obscure references, quick- witted dialogues, and fast-paced punch lines furthermore did not make for easy consumption, and thus the show failed to attract a sizeable amount of viewers. While Studio 60 on the Sunset Strip did not become an instant success either, it still did comparatively well in the Nielson ratings and had the additional advantage of being a drama series produced by a household name, Aaron Sorkin1 of The West Wing (NBC, 1999-2006) fame, at a time when high-quality prime-time drama shows were dominating fan and critical debates about TV. Prerequisites: Some social science background Course Description: This course provides an advanced introduction to anthropological theory and methods designed for food and nutrition science and policy graduate students. Section 1 covers anthropology's four-field modes of inquiry, cross-cutting theoretical approaches and thematic interest groups, their respective institutions and intellectual concerns. Section 2 demonstrates applications of these concepts and methods to cutting-edge food and nutrition issues. Assignments and activities incorporate background readings, related discussions, and short writing assignments, plus an anthropological literature review on a focused food and nutrition project, relevant to their particular interests. The course overall encourages critical thinking and scientific assessment of anthropology's evidence base, analytical tools, logic, and meaning-making, in the context of contributions to multi-disciplinary research and policy teams. Weekly 3-hour sessions feature an introductory overview lecture, student-facilitated discussion of readings, and professor-moderated debate or exercise illustrating that week's themes. Throughout the term, participants keep a written reading log (critical response diary), to be handed in week 3 and 6. In lieu of a mid-term exam, there are two 2-page graded written essay assignments, due weeks 4 and 8. The term-long food-and nutrition proposal- writing project will explore anthropological literature on a focused food and nutrition question, with an outline due week 9, and a short literature review and annotated bibliography due week 12.

    The Dangerous Right to Food Choice Samuel R. Wiseman* ABSTRACT Scholars, advocates, and interest groups have grown increasingly concerned with the ways in which government regulations—from agri- cultural subsidies to food safety regulations to licensing restrictions on food trucks—affect access to local food. One argument emerging from the interest in recent years is that choosing what foods to eat, what I have previously called “liberty of palate,” is a fundamental right.1 The attrac- tion is obvious: infringements of fundamental rights trigger strict scruti- ny, which few statutes survive. As argued elsewhere, the doctrinal case for the existence of such a right is very weak. This Essay does not revisit those arguments, but instead suggests that if a right to food liberty were recognized, the chief beneficiaries would not likely be sustainable agri- culture consumers and producers, but rather those with the most at stake (and the most expensive lawyers)—big agriculture and large food manu- facturers. I. INTRODUCTION For a variety of reasons, including concerns relating to health, taste, and the environment, Americans have grown increasingly interested in fresh, healthy, local foods and sustainable agriculture. Scholars, advo- cates, and interest groups have, in turn, grown increasingly concerned with the ways in which government regulations—from agricultural sub- sidies to food safety regulations to licensing restrictions on food trucks— affect access to local food. BigPicnic brought together members of the public, scientists, policy-makers and industry representatives to develop exhibitions and science cafés. Across 12 European and one Ugandan botanic gardens participating in the study, we surveyed 1189 respondents on factors and motives affecting their food choices. The study highlights the importance that cultural knowledge holds for understanding food choices and consumer preferences. The findings of this study are discussed in the wider context of food security issues related to sustainable food choice, and the role of food as a form of cultural heritage. Specifically, the findings underline the importance of the impact of food preferences and choices on achieving sustainability, but also indicate that heritage is a key parameter that has to be more explicitly considered in definitions of food security and relevant policies on a European and global level.

    Self-reported food safety behaviors in independent ethnic restaurants: An application of the Social Cognitive Theory by Basem Boutros B.S., Fayoum University, 2006 M.S., Fayoum University, 2011 AN ABSTRACT OF A DISSERTATION submitted in partial fulfillment of the requirements for the degree DOCTOR OF PHILOSOPHY Department of Hospitality Management College of Human Ecology KANSAS STATE UNIVERSITY Manhattan, Kansas 2018 Abstract Ethnic foods have gained in popularity and have become mainstream in the diet of most Americans. However, researchers have noted that ethnic food, specifically food served in ethnic restaurants, has been associated with foodborne outbreaks. Little has been done using the Social Cognitive Theory to predict food safety behaviors, especially in independent ethnic restaurants. The purpose of this study was to determine whether self-efficacy, self-regulation, outcome expectations, and environmental determinants are predictive of self-reported food safety behaviors in independent ethnic restaurants. Utilizing a thorough literature review and results of five focus group and group interviews, a questionnaire was developed. The questionnaire was translated to Chinese and Spanish and back-translated to English to ensure consistency. After pilot-testing, a multistage random sampling technique was utilized to collect data, targeting a total of 150 food handlers from independent Mexican and Chinese restaurants. A total of 204 food handlers responded, but due to incomplete data or responses from non-food handlers, 201 responses were usable for a response rate of 80.4%. A multiple regression analysis investigated the prediction of food safety behavioral intentions based on the respondents’ self-efficacy, self-regulation, outcome expectations, and environmental determinants and found the model was significant (F = 75.246, p = 0.002).

Examples include race and racism, sex and gender, reproduction and birth, health and medicine, global nutrition, obesity, stress and mental health, violence, and trauma, and others. The course will introduce students to perspectives from social, cultural and biological anthropology and then bring these perspectives into play to investigate and illuminate these examples of the human experience. One of the key goals in the class is to better understand how individuals' lived experience becomes embodied as human biology.
