I am delighted to welcome our new properties for 2021, Dax Restaurant in Dublin and Delphi Lodge in Co. Galway. Our collection offers endless options to those of you seeking a scenic retreat or a gourmet getaway. For the adventurers among you, we offer fishing, hiking, cycling, golf and equestrian pursuits in several properties. There are enticing packages for food lovers and gourmets, as all our houses are synonymous with good food, many producing much of the produce in their gardens. Some also offer internationally acclaimed cookery courses. We are very proud of our chefs and patron chefs with many of our restaurants, boasting one- and two-star Michelin restaurants. By our very nature and setting, all of the Blue Book properties offer rest and relaxation, and many have award-winning spas or wellness centres, extensive grounds and gardens in which to roam and relax.
