In the Know about Stir Frying Stir frying is a simple, versatile and often misunderstood cooking technique. Originating in China, this technique reflects the ingredients, culture and history of Asian cuisine. The keys to this method of cooking are starting with small pieces of food (any food, from vegetables and tofu to meat, poultry or fish) and cooking at very high heat for a short time. Stir frying opens up endless opportunities for mixing and matching ingredients and flavors—don’t be afraid to experiment! Below are the steps for preparing almost any food using the stir frying method: 1. Heat a wok or large pan. 2. Choose an oil with a high smoke point (peanut, safflower, corn, canola, soybean or sunflower) 3. If using a protein, cook first, then remove. Add vegetables. 4. Cook for a short time over high heat until tender but crisp. Do not overcook. 5. Add flavor! Try any of these: soy sauce, vinegar, garlic, ginger, herbs or spices, citrus zest or even dried fruit. 6. Remove from heat and enjoy!
Summer Veggie Stir Fry Prep time: 10 mins / Cook Time: 5 min/ Servings: 2 people (as main dish)
INGREDIENTS DIRECTIONS
2 cups cooked brown rice 1. Cook rice in advance using your preferred method, or per the package directions. 1-2 bunches pac choi, chopped 2. Prepare all of the vegetables by washing and cutting as 2 summer squash, 1/4” round slices indicated. 2-4 carrots, thinly sliced 3. Heat a wok or large non-stick frying pan on high heat. Add 1- 1 bunch scallions, thinly sliced 2 tbsp oil.
1-2 tbsp oil (see above for suggestions) 4. Add the carrots and stir for 1 minute, then add the summer squash and continue stirring for 1-2 minutes. 1-2 tbs soy sauce 5. Add pac choi, and cook until tender, about 1 minute.
6. Take the pan off of the heat and add scallions and soy sauce. Add egg, tofu, chicken, fish or meat if you Serve over rice. like!

2 tazas de arroz integral cocido 1. Cocine el arroz con anticipación utilizando su método preferido o según las instrucciones del paquete. 1-2 manojos de pac choi, picados 2. Prepare todas las verduras lavando y cortando como se indica. 2 calabazas de verano, en rodajas 3. Caliente un wok o una sartén antiadherente grande a fuego redondas de 1/4 ” alto. Agrega 1-2 cucharadas de aceite. 2-4 zanahorias, en rodajas finas 4. Agregue las zanahorias y revuelva durante 1 minuto, luego 1 manojo de cebollines, en rodajas finas agregue la calabaza de verano y continúe revolviendo durante 1-2 minutos.
