PROSECCO DOC TREVISO SPUMANTE GRAPE VARIETY OR BLEND 100% Glera. TERROIR AND CLIMATE The appellation “DOC Treviso Prosecco” means that the grapes are grown within the Province of Treviso and the wine is also bottled within this area. Our vineyards are located at the foot of the hills called Colli Asolani, north-east from Treviso. The climate here is mild and the soil composition is rich, with large percentages of clay, resulting in a full bodied-product with velvety bubbles. YIELD 180 q/ha. Estimated yield per plant: 7-8 kg. HARVEST DATE Early September. WINEMAKING Charmat method (tank method or cuve close). The secondary fermentation takes place in large, temperature-controlled pressurised tanks called autoclaves where the CO2 developed naturally during the fermentation, thanks to added yeasts and sugar, becomes trapped in the wine in the form of bubbles. Production timing and stages are dictated by the product specification for DOC Prosecco, as are the tests that the authority in charge performs on the wine before allowing the product to be bottled and released for sale. The DOC seal around the capsule stands as a guarantee of quality and authenticity for the consumer. STORAGE Best enjoyed young and fresh. Recommended shelf life is 12 months.
