It is another proud moment for me to present the outcome of our Institute’s research programs for the period 2014-15. Our achievements were no doubt possible due to the collective efforts of the entire R&D community of the Institute, ably supported by our non-scientific staff. A vibrant and creative CSIR-CFTRI has been achieved by the steadfast and passionate involvement of Team CFTRI. Our XII Five Year plan projects - AGROPATHY, WELFO, LIPIC and NUTRI-ARM, are geared up with their deliverables. These projects have been very successful as measured by the yardstick of publications in high impact, peer reviewed journals and by the innovative technology outcomes. Being a premier food research laboratory in the country, CSIR-CFTRI has attracted many institutions to partner with it in furthering the R&D in the area of Food Science and Technology. This year saw the collaborations with Karnataka Govt. for establishing a Nutra-Phyto Incubation Centre and Common Instrumentation facility (NPIC-CIF) on campus; a MoU with PCPCL, a farmer’s cooperative in Palakkad, for marketing Coconut Neera in PET bottles. We have also signed a MoU with the Food Safety Commisionerate of Kerala, to help them upgrade the analytical laboratory and strengthen food safety in their state. Human resource development department has seen a rising increase in the number of students joining our M.Sc. (Food Technology), Certificate course in Milling Technology and Integrated M.Sc.-Ph.D programme (Nutrition Biology). The Ph.D programs under AcSIR and Mysore University are monitored for high quality and best standards. CSIR- CFTRI also signed a MoU with the Indian Institute of Crop Processing Technology (IICPT), Thanjavur, to collaborate and synergise their efforts in curriculum development. As part of the continuing education programme, Short Term Courses and customized training programmes are offered to empower entrepreneurs and industry personnel. The Institute continued to show its commitment towards the farming community, by organizing an All India Farmers Empowering Workshop and many other awareness programmes conducted in association with agencies like the Ministry of MSME, Govt. of India. Keeping in mind the Dehradun Declaration by the Hon’ble Minister for S&T earlier in June this year, we have focused on societal development, resulting in beneficiaries to the tune of several thousand farmers and several hundred anganwadi children. As in the previous years, OPEN DAYS were organised that have drawn a good number of visitors and students for first hand interaction with scientists. Overall, it was a fulfilling year in terms of academic and societal accomplishments. It is my duty to acknowledge the support received from CSIR, New Delhi; the guidance from the Research Council and Management Council of the Institute and various funding organizations and Industries. I wish to thank the staff and students of the Institute for their zealous and relentless efforts in making this success possible every time. I look forward to a more productive year ahead! We have delicious and appetizing food, snacks, and sweets. Boiled rice is our staple food. It is served with a variety of vegetables, curry, lentil soups, fish and meat. Fish is the main source of protein. Fishes are now cultivated in ponds. Also we have fresh-water fishes in the lakes and rivers. More than 40 types of fishes are common, Some of them are carp, rui, katla, magur (catfish), chingri (prawn or shrimp), Shutki or dried fishes are popular. Hilsha is very popular among the people of Bangladesh. Panta hilsha is a traditional platter of Panta bhat. It is steamed rice soaked in water and served with fried hilsha slice, often together with dried fish, pickles, lentil soup, green chilies and onion. It is a popular dish on the Pohela Boishakh. The people of Bangladesh are very fond of sweets. Almost all Bangladeshi women prepare some traditional sweets. ‘Pitha’ a type of sweets made from rice, flour, sugar syrup, molasses and sometimes milk, is a traditional food loved by the entire population. During winter Pitha Utsab, meaning pitha festival is organized by different groups of people, Sweets are distributed among close relatives when there is good news like births, weddings, promotions etc. Sweets of Bangladesh are mostly milk based. The common ones are roshgulla, sandesh, rasamalai, gulap jamun, kaljamun and chom-chom. There are hundreds of different varieties of sweet preparations. Sweets are therefore an important part of the day-to-day life of Bangladeshi people.

    BENGALI PITHA (PIE) PATISHAPTA PITHA FOR THE FILLING: Ricotta cheese 1 tub Condense milk 1 can Sugar 2 tsp Rice flour 2 tsp Semolina 2 tsp Ghee 2 tsp Shredded coconut 1 Cardamom freshly ground 10 pods Steps: Pour ghee in a pan and fry semolina and rice flour until they are golden brown. Mix the ingredients all together and put it on stove and stir continuously for an hour until it is semisolid. When it is sticky and semisolid, it is ready as a filling. FOR THE WRAPPER: Rice flour 1/2 lb All-purpose flour 1/2 lb Salt a pinch Sugar 1 tsp Lukewarm water 1/2 litter Oil or butter 1 cup Steps: Mix the ingredients together and allow them to sit for 1/2 hour. Heat a nonstick frying pan. Soak a brush with oil or butter and brush the frying pan. Take one big spoon of batter and pour on the frying pan. Then spread out by holding the handle. When the bottom layer get brownish it will be done Then put the filling and wrap it. BHAJA PITHA FOR SHELL: Shell 1- 1/2 cup Moong dal Rice flower 1 cup A pinch of salt Shell 2- Boiling water All-purpose flour Steps: Boil 3 cups of water in a pan. Add 1/2 cup of Moong dal and boil on medium heat for 15 mins and let the dal get tender. Then add a pinch of salt and the rice flour. Cover the pot with a lid for a min. Then mix it all together.

The poor quality of the breads that are currently available demonstrates that manufacturing remains a significant technological problem. This is mainly due to the absence of gluten, which has a huge negative impact on dough rheology and bread characteristics. Gluten replacement is still the major challenge in the development of doughs and baked goods. The literature documents various improvement strategies. The most active approach seeks to identify alternative ingredients that can mimic the viscoelastic properties of the gluten network, notably hydrocolloids, enzymes, emulsifiers, and alternative sources of protein. However, other innovative strategies, such as high pressure, using heat to dry flour, and sourdough fermentation, have been investigated. In this context, the first aim of this review is to summarize current knowledge regarding gluten-free doughs, breads, and bakery products. Secondly, as it is clear that the manufacture of gluten-free products remains a key challenge, it suggests some improvement strategies that can boost their nutritional, technological, and sensorial characteristics. The ritual foods are mainly made from the ingredients that are locally available or most popular in Odisha. Deep understanding of the ritual foods of Odisha can show its continuity with the past and reflect cultural ideas about eating for good health, nutrition and many more.
