    CHAPTER 18 : SAUSAGE Sausage is any meat that has been comminuted and seasoned. Comminuted means diced, ground, chopped, emulsified or otherwise reduced to minute particles by mechanical means. A simple definition of sausage would be ‘the coarse or finely comminuted meat product prepared from one or more kind of meat or meat by-products, containing various amounts of water, usually seasoned and frequently cured .’ In simplest terms, sausage is ground meat that has been salted for preservation and seasoned to taste. Sausage is one of the oldest forms of charcuterie, and is made almost all over the world in some form or the other. Many sausage recipes and concepts have brought fame to cities and their people. Frankfurters from Frankfurt in Germany, Weiner from Vienna in Austria and Bologna from the town of Bologna in Italy. are all very famous. There are over 1200 varieties world wide Sausage consists of two parts: - the casing - the filling THE CASING Casings are of vital importance in sausage making. Their primary function is that of a holder for the meat mixture. They also have a major effect on the mouth feel (if edible) and appearance. The variety of casings available is broad. These include: natural, collagen, fibrous cellulose and protein lined fibrous cellulose. Some casings are edible and are meant to be eaten with the sausage. Other casings are non edible and are peeled away before eating. 1 NATURAL CASINGS: These are made from the intestines of animals such as hogs, pigs, wild boar, cattle and sheep. The intestine is a very long organ and is ideal for a casing of the sausage.

The ques- tion which puzzled King Greorge the Third is no longer an enigma. I know now how the apples get into the dumplings, how to baste a chicken, make a pork pie, and fry dough-nuts. I have read your book carefully, and can say it is full of good things. I can only compare it to old Dr. Kitchiner's recipe-book. Dr. Sir Theodore Mayerne's ArchiTnagirus Anglo-Gallicus, which you may remem- ber on account of the title. A badly cooked dinner, the records of crime will shew, has caused nearly haK the suicides of the nation, and matrimonial infelicities may be traced to the same direct cause. We have no Schools of Cookery, as you know, in our Dominion, where oui young ladies may learn that art which the ancients deemed second only to medicine.     The Oxford Dictionary of Quotations Preface What is a “quotation”? It is a saying or piece of writing that strikes people as so true or memorable that they quote it (or allude to it) in speech or writing. Often they will quote it directly, introducing it with a phrase like “As——says” but equally often they will assume that the reader or listener already knows the quotation, and they will simply allude to it without mentioning its source (as in the headline “A rosè is a rosè is a rosè,” referring obliquely to a line by Gertrude Stein). This dictionary has been compiled from extensive evidence of the quotations that are actually used in this way. The dictionary includes the commonest quotations which were found in a collection of more than 200,000 citations assembled by combing books, magazines, and newspapers. For example, our collections contained more than thirty examples each for Edward Heath’s “unacceptable face of capitalism” and Marshal McLuhan’s “The medium is the message,” so both these quotations had to be included. As a result, this book is not—like many quotations dictionaries—a subjective anthology of the editor’s favourite quotations, but an objective selection of the quotations which are most widely known and used. Popularity and familiarity are the main criteria for inclusion, although no reader is likely to be familiar with all the quotations in this dictionary. The book can be used for reference or for browsing: to trace the source of a particular quotation or to find an appropriate saying for a special need.
