There is a 15 minutes break each morning at 11,30 a. m. Morning sessions end at 1,30 p. m. and afternoon sessions commence at 3,30 giving members 2 hours for lunch. The papers read in the morning are discussed in an informal way during the afternoon session between 3,30 p. m. and 5,30 p. m. Since the text of each paper is known to the members, the time for each presentation is restricted to 12 minutes at most. At the time given in the detailed programme, coaches are available to take members from their respective hotels to the place of Conference. No discussion will be opened after the reading of a paper, but questions may be asked or revelant points contributed. Lactic acid bacteria (LAB) have been used as protective cultures for many centuries. The objective of this work was to characterize 10 native LAB isolated from meat masses with biopreservative potential for meat products. The isolates were subjected to viability tests with different concentrations of NaCl, nitrite, and nitrate salts, pHs, and temperature conditions. Antibiotic resistance and type of lactic acid isomer were tested. In addition, the isolates were tested against seven pathogens, and inhibitory substances were identiﬁed by diffusion in agar wells. Finally, two isolates, Lb. plantarum (SB17) and Lb. sakei (SB3) were tested as protective cultures of chorizo in a model. As a result, the viability at different concentrations of NaCl and nitrate and nitrate salts were obtained. pH and temperature exerted a negative effect on the growth of some of the isolates. Papers of BAS Humanities and Social Sciences Vol. 2, No 3-4, 2015 ETHNOLOGY BULGARIAN RESTAURANTS AND SHOPS IN GERMANY AND THE USA AND THEIR FUNCTIONS AS MIGRANT INSTITUTIONS Tanya Matanova Abstract: This article is focused on Bulgarian catering establishments as shops, cafés, restaurants, etc., opened by Bulgarian migrants in Germany and the USA. On the one hand, they satisfy the food nostalgia of the Bulgarian migrants caused by the phenomenon of food conservatism. On the other hand, as places for communication they contribute for the social networking of the Bulgarian migrant community. Further- more, as migrant institutions they bring to the table Bulgarian food outside Bulgaria and together with the interior (and sometimes with the exterior), the Bulgarian music and the used Bulgarian language they contribute for the preservation and maintenance the Bulgarian cultural heritage. The menus of the restaurants are analyzed to see which categories of Bulgarian catering establishments there are in the USA and Germany and which Bulgarian dishes and specialties are offered to the guests. Key words: Bulgarian restaurants, shops, food nostalgia, Bulgarian migrants The following text is composed to reveal information about Bulgarian shops and restaurants in Germany and the USA, more exactly: what kind of Bulgarian dishes Bulgarian restaurants serve; in which categories the Bulgarian catering establishments could be classified; how their menus satisfy the Bulgarian mi- grants’ food nostalgia and what other functions the Bulgarian restaurants as migrant institutions fulfill. For the realization of these research tasks I applied the methods of participant observation, semi-structured and online interviews with Bulgarians living in the USA and Germany.

MERKEZ – Production of HALAL meat and meat products – Gotse Delchev MERKEZ Company Ltd. is the first private producer in Bulgaria of meat products free of pork and impurities in them. The company’s products are produced by HALAL meat on special recipes. Merkez Ltd. is located in Gotse Delchev. The company’s activity began in 1998, but the partners associated with this business since 1996, when registrations begin, construction, equipment and more. For a period of twenty years Merkez Ltd. managed to establish itself on the Bulgarian market as a leader in the production of meat products and sausages without pork and impurities, which was necessary for people who do not consume pork products. In 2006 the company moved production to a newly equipped machines by European standards, a factory with a capacity of processing 15 tons per day located on an area of over 2000 square meters. In 2014, development of the company MERKEZ continued with the newly built plant, which the company already has its own slaughterhouse and cutting plant for red and white meats. The new factory is equipped with most modern and sophisticated machinery and equipment, located on 2400 square meters and is associated with meat processing enterprise of MERKEZ, the capacity to slaughter 50 pcs. cattle or 400 pcs. small cattle per day.
