Auchentoshan 18yr 52.1% Triple-distilled like all Auchentoshan, this is aged entirely in bourbon casks for £16 a soft, rounded, delicate malt. Auchentoshan Three Wood 43% Their signature malt, aged in bourbon, oloroso and Pedro Ximenez casks. £13 Glenkinchie 12yr 43% “The Edinburgh Malt”’s flagship whisky is light and grassy with hints of £10 florality. Glenkinchie 24yr / Special Releases 2016 57.2% The oldest official bottling of Glenkinchie ever, this was finished in sherry £40 casks to give a rounded, fruity note. Only 5928 bottles were produced. 4 SCOTCH HIGHLAND Aberfeldy 12yr 40% A great all-rounder of a single malt, it leads with subtle sherried oak and a £10 hint of peat. Aberfeldy 21yr 40% Lots of honey and vanilla on the palate, with a long, lingering finish. £20 Ardmore 7yr / Elixir Distillers & Shinanoya 58.3% Finished in a Laphroaig Quarter Cask, this Japan-only release is cask £16 strength, peaty and powerful. Ben Nevis 10yr 46% Distilled at the foot of the mountain, their signature malt is sherried with £14 notes of chocolate and coffee. Clynelish 14yr 46% The “second” distillery of Brora, Clynelish’s famous style is big, waxy and £12.5 unctuous, and their 14-year-old is the diamond. Dalmore 15yr 40% Matured in three different sherry casks, it is zesty and orangey. £14.5 5 SCOTCH HIGHLAND Dalmore 18yr 43% Rich fruitcake and Christmas spices are at the forefront of this wonderful £18 sherried malt. Dalwhinnie 15yr 43% Delicate stone fruits and walnuts on the palate, with an oaky, vanilla-led £12 finish. Dalwhinnie 1998 Distiller’s Edition 43% A discontinued version of the Distiller’s Edtion Dalwhinnie, finished in £15 oloroso sherry casks. Edradour 10yr 2009 Straight From The Cask 55% A single cask, cask strength, all-sherry powerful malt from Scotland’s smallest £16 whisky distillery, it is bold and in your face. Glen Garioch 12yr 48% Glen Garioch (gee-ry) is the highland’s secret gem, they produce wonderful- £12.5 ly balanced malts. Their flagship 12-year-old is oaky, fruity and spicy. Glen Garioch 24yr / A.D. Rattray 57.5% A rare independent bottling by A. D. Rattray, it has spent 24 years in a £20 bourbon cask before release. Only 231 bottles produced. 6 SCOTCH HIGHLAND Glen Ord 13yr / Old Particular 48.4% Part of Douglas Laing’s Provenance range and aged entirely in refill bourbon, £19 it is warm, soft and honeyed, with hints of orange blossom. Glendronach 15yr Revival 46% Glendronach are famous for their rich, fruity whiskies and this is no excep- £15 tion! Reinstated by popular demand, it is aged in both oloroso and Pedro Ximenez casks. Glenglassaugh 8yr 2011 Sauternes / RMW & Nauticus 56.1% Produced for the 1st anniversary of Edinburgh bar Nauticus by the famous £17 Royal Mile Whiskies, it is sweet, honeyed and delicious. Only 275 bottles were ever produced. Glengoyne Teapot Dram Batch 5 59.6% A distillery-only release, named after the workers’ vessel of choice for their £21 three drams a day at work. Cask strength and first fill oloroso aged, it is bold, fruity and spicy. Glenmorangie 10yr 40% The UK’s best-selling single malt, it is the standard that all single malts aim £9.5 for. Glenmorangie 18yr 43% Finished for three years in oloroso casks to add a rich, nutty complexity with £17 a butterscotch finish. 7 SCOTCH HIGHLAND Glenmorangie Lasanta 43% A 12-year-old finished in Pedro Ximenez casks, it has notes of Ferrero £13.5 Rocher and fresh coffee. Glenmorangie Nectar D’Or 46% Sauternes-cask finished, with notes of lemon, honey and baklava. £14.5 Glenmorangie Quinta Rubin 46% 14 years old and port-finished, stewed berries, toasted almonds and cedar- £14 wood. Glenmorangie Signet 46% This uses a chocolate malt more often found in stout brewing, it gives a dry £22 cinnamon note, with roasted cashews and truffle oil. Highland Park 12yr 40% A wonderful all-rounder, this has notes of wood shavings, green tea and £10 grilled orange. Highland Park 18yr 43% A long vanilla nose, with ripe stone fruits, citrus and toffee. £18 8 SCOTCH HIGHLAND Highland Park 21yr 47.5% Brilliantly complex and long, this has gingerbread on the palate, with hints of £50 flint and orchard fruit. Ledaig 8yr / Signatory 60% Notes of bonfire smoke and green peat are balanced beautifully with juicy £14 nectarines and yellow plums. Ledaig 13yr / Single Malts of Scotland 57.3% Savoury on the palate with salty bacon and popcorn but finishes with a £16 caramel sweetness. Oban 14yr 43% A rich nose of wood fire and seaweed but the palate is crisp and citrusy. £14 Old Pulteney 12yr 40% Raw cookie dough and chocolate bars are prominent notes with hints of £9.5 white pepper. Royal Lochnagar 2000 Distiller’s Edition 40% This edition features notes of banana bread and strawberry jam, with a £17 delightful finish of ginger snaps. 9 SCOTCH HIGHLAND Scapa Skiren 40% Creamy body with hint of orchard fruit and citrus peel. £10.5 Talisker 10yr 45.8% This peated classic is fragrant of robust smoke that finishes with sticky tree £10 sap, olive brine and cooked pears. Talisker 10yr / 2000s Presentation 45.8% This discontinued edition elevates the silky rich body of Talisker and delivers £15 a jammy apple tart paired with crackling firepit. Talisker 18yr 45.8% A slow sipper that has mature flavours of apple brandy, ground coffee and £16 seaweed.     Single Malts Single malt whiskey is distilled from 100% malted barley in a traditional copper pot still by a single distillery. Contrary to popular belief, single malts can be double or triple-distilled. Like the other three types, it isn’t Irish whiskey unless it was aged for at least 3 years and a day within the borders of Ireland. A Drop Of The Irish 8 yr. Finished in sherry casks, this version from Blackadder has been bottled less than 366 18 times. Sweet tobacco and toffee draw you into be punched in the gut by a strong dose of spicy, charred wood, and fried fruit. Sweetly finished with malt and smoky dark chocolate. ABV. 46 A.D. Rattray 11 yr. Fresh pineapple nose with golden syrup and salted toffee. Tastes of sweet barley and cereal 24 with a dry, lingering finish. From the Cooley Distillery. ABV. 56.2 Bushmills 10 yr. Matured predominately in bourbon casks, this version of Bushmills will go toe to toe with 8.5 any single malt of the Scottish variety. The nose of this whiskey has an orchard smell with some added vanilla and copper. Malt, walnut, and citrus flavours bring you to a soft finish of taffy and oak. ABV. 40 Bushmills 16 yr. Matured in three woods, this version was aged in sherry, bourbon, and port wine casks. 12 The tinge of ruby redness in colour hints at the distinct notes of juicy fruit, nuts, and spice that are destined to meet your senses. ABV. 40 Bushmills 12 yr. Matured predominately in sherry casks, this 12 to 14-year-old whiskey carries tones of 18 Distillery Reserve fruit, malt, and honey from start to finish.

PATRICK’S COLLEGE, DRUMCONDRA, DUBLIN The author gratefully acknowledges the generous support of the IRCHSS in funding this research ii Abstract This thesis demonstrates how the evolution and direction of the Irish distilling industry was determined by a number of influences including legislation, political expediency, revenue maximisation and technical advances. The relationship is shown by examining the growth, consolidation and eventual decline of the spirit distilling industry in the Naas revenue collection district. The thesis consists of a two-part examination of the subject. Part one discusses the major influences shaping Irish distilling. Part two seeks evidence for the effects of these influences in the history of distilling in the Naas revenue collection district. In part one the initial chapter examines the political origins of the excise while chapter two explores the country-wide administrative structures and enabling legislation which ensured the assessment of excise liabilities and the secure remittance of the resulting revenue to the treasury. Chapter three examines examples of the technology employed by the excise to support revenue collection. Part two of the thesis traces distilling in the Naas excise collection area. The initial chapter in this section (chapter four) is devoted to the eighteenth century when distilling consisted of many successful family-run craft concerns which later evolved into a smaller number of larger industrial-scale distilleries.
