Executive Chef Massimo Pasquarelli takes inspiration from the social and cultural trends of the 1960s to present the Republic dining menu. Mass immigration and the rise of the international jet set facilitated the permeation of cross-cultural infuences in local cuisines, and adapted to new palates. Post-war industralisation revolutionised the supply chain and food business, and started to become a worldwide phenomenon. In Singapore, the streets were flled with the heady aromas of local spices as pushcarts plied their humble home-cooked dishes.
