Earth Day

Earth Day

Earth Day is a holiday designed to raise awareness of environmental

problems and foster an appreciation for the Earth and the natural environment.

The United States government defines the holiday as a time to celebrate gains, create new visions, and accelerate progress for environmental change.

Earth Day is held yearly in the spring in the northern hemisphere (fall in the southern hemisphere.) Although April 22nd is the much publicized date of the holiday, the day is actually the second Earth Day, founded by United States Senator Gaylord Nelson in 1970. Today, the holiday is celebrated by many countries worldwide on April 22. The first Earth Day on the March equinox (March 21) was established in 1969 by peace activist John McConnell. Today, that holiday is celebrated on the March equinox primarily by the United Nations.

Foods from Abroad

From Mexico Sopes al pastor is delicious. It is somewhat similar to tacos al pastor, but has a few variations in the ingredients. Sopes is

essentially marinated pork. Some add pineapples giving it a fruity

and sweet taste to blend with the spice. Hand-made tortillas are used

topped with beans, lettuce, fresh cheese, and sour cream. The cheese is unique. It is a feta cheese and something we in North America wouldn’t think of when eating Mexican food. Don’t be turned off because this does not fit into your conceptual view. Sopes al pastor

is out of this world and the feta adds to the flavor. If you’re visiting Arturo or Agustin in Mexico, ask them to try this dish.

From Singapore

Char Kway Teow is a high-fat hawker Singaporean favorite. This dish consists of flat rice noodles stir-fried with lard, dark and light soy sauce, chili, de-shelled cockles, sliced Chinese sausage, bean sprouts, Chinese chives and sometimes prawns and egg. Essential to the dish is good “wok” used at high heat. Many now choose to omit the cockles but char kway teow will always be incomplete without

the sinfully rich fried pork lard pieces. Give it a try, you’ll love it!

From Spain

Tapas is a great Spanish treat composed of small dishes of

different types of food for appetizers or snacks. The dishes may be cold (jamón serrano, queso manchego, olives, etc.) or warm (tortilla española, meatballs, etc.) and can be served as bar food or as complete meals. It’s a great opportunity to taste a whole variety of flavors and dishes, so if you are ever in Spain make sure to order tapas and experience what the country has to offer! It is a true

delight and a must if you happen to be in this fascinating country.

From Kenya Kenyan Stew can include a number of different meats: beef stew, goat stew, chicken stew or any other animal stew. Kenyan stew dishes might also include a few other base vegetable ingredients such as carrots, peppers, peas, or potatoes. The sauce is usually formed from a light tomato base and accented with onion, salt and pepper, and that essential mchuzi mix! If you ever find yourself in eastern Africa on a cool evening, try a dish of Kenyan stew. It is well worth the effort.

The Perplexing Case of Lindsay Hawker Solved

Lindsay Anne Hawker was a 22-year-old British teacher who met her unfortunate end while teaching in Tokyo in early 2007. A recent university graduate, Hawker decided to leave her native England and embark on a teaching stint in the Far East. Japan is often regarded as the Shangri-la for aspiring EFL teachers, but this adventure would be no Shangrila for Hawker. She had met a young man named Tatsuya Ichihashi who was a bit of an odd ball but had convinced Hawker to give her private English lessons for extra money. One night, after meeting at Ichibashi’s apartment, she never returned home nor did she show up for work the next day. After finding a note with an address on it at Hawker’s residence, the police were led to Ichihashi’s apartment in their search for the missing Hawker. When police arrived, Ichihashi was seen fleeing barefoot. Upon searching his apartment, out on the veranda, the police found a bath tub filled with sand and when they dug a little deeper, the

remains of Hawker. The Japanese police sought Ichihashi for the murder.

This touched off a massive nationwide manhunt to no avail. Rumor had it that Ichihashi had fled the country. For several years they searched. On the 10th of November 2009, Japanese news media reported that the police had apprehended him. In a bizarre twist to the story, Ichihashi had undergone cosmetic surgery to alter his appearance to evade detection.

The Circleville Letters Circleville is a small city in Ohio that has a population of 13,000. Each year it hosts the Circleville Pumpkin Show which is the biggest event of the year. The mystery begins in 1976 when residents started receiving enigmatic and threatening letters. Thousands of letters written in block The letters were mailed to city officials and citizens. School bus driver Mary Gillispie accused her of having an extra-marital affair with a school official. On August 19th, 1977, Gillispie’s husband received a phone call from the apparent author of the letters, went to confront him or her, but was found dead a short distance from his home. His car had been driven off the road and one shot was fired from his gun. Later, after driving her bus, Mary saw signs along her route blocking her. She went to take one down only to discover it was booby-trapped. The gun belonged to her former brother-in-law and he was arrested and put in prison; however, the Circleville Letters continued even though the man was in solitary confinement. To this day, nobody knows who wrote the letters and they finally stopped in the 1990s. The case remains a perplexing unsolved mystery. The letters were sent from Columbus and many of Circleville’s residents have come under police scrutiny but, up to this point, no credible suspects have

been put forth.
