Upon release, this ’82 Sassicaia burst with laser-precise yet juicy red and black fruit, mocha, spice, earth and floral aromatics; round yet structured, it caressed the mouth with balanced, chewy tannins. Now with more than thirty years of age, this mature wine has added delightful tertiary notes to the mix — cedar mingles with dusty earth, graphite and liquorice in a plummy, velvety and elegant wine. Sassicaia is a masterful cuvée of the best Cabernet Sauvignon and grapes from the of Castiglioncello, Doccino, Quercione, San Martino, Mandrioli, Sassicaia, and Aianova, all of which are situated on hilly slopes in a sub-zone of Bolgheri. This dry is deep ruby red with garnet highlights and has the scent of cherries (both fresh and under spirits), plums and liquorice, spices such as pepper and cinnamon, and hints of undergrowth. Extremely elegant, well- balanced and velvety, but at the same time robust and complex, dry, full- bodied, generous and austere. It is incomparable with braised meats of roast game and with very mature, piquant cheeses. Excellent with raw tuna, sushi and with Thai, Vietnamese and Indian cuisine. Try sipping it too, on its own, outside the context of a meal.

Large format Amarone Riserva from Zenato Wine Cellars – signed by Alberto Zenato. Amarone Riserva ”Sergio Zenato” is only produced in excellent , from a selection of grapes – Corvina, Rondinella and Oseleta, coming from the oldest vineyards in Costalunga Estate in Sant’Ambrogio di Valpolicella. The particular low yields have led to a wine of great concentration, with aromas of vanilla and fruit, and an intense and long-lasting taste.

Upon release, this classic, balanced ’94 Sassicaia offered a mélange of red and blue fruits, fresh-cut herbs, cigar wrapper, and warm saddle leather, all conveyed on a balanced, restrained palate replete with chewy tannins. Now with two decades of perfect maturity, this wine adds tertiary notes to the mix, deepening the brooding character of tobacco and leather, and offering a touch of dried fruits to its velvety, sinuous palate. Rainy and cool in the spring and hot and dry in the summer, 1994 didn’t offer prime conditions; fortunately, Tenuta San Guido’s microclimate aided the grapes to exceptional development and a of rich, thick-skinned, nicely tannic grapes. This wine ferments in temperature-controlled stainless steel, macerating for fifteen days; secondary fermentation also occurs in steel, and then the wine ages for two years in barrique and a few months in bottle before release.

This is a rich and powerful Amarone, on the nose it reveals notes of cherries, red fruit preserve, leather, tobacco, liquorice, cocoa and a delicate nuance of vanilla. The wine displays great forcefulness as it enters the mouth, as well as concentrated fruit on the palate. Its barely perceptible sweetness gives way in the aftertaste to a very faint bitter cherry note, typical of the classic Amarone style.

Aromas of green pepper, eucalyptus, chocolate, spice — white pepper, savour notes of leather. Full bodied with flavours of chocolate, vanilla, red fruits (plum), leather and herbal notes. Wonderful before a meal to celebrate an occasion, or as an accompaniment to dessert.

Lot #469 WHISKY PAIRING Value: $300 Two 750 ml bottles.

Aberlour A’Bunadh – Batch 46 was released 2013 and sold out. Matured in Oloroso butts and bottled at cask strength with no chill filtration. Nose: sweetly sherried, with buttery notes and juicy ripe apples. Palate: Christmas cake richness, with a touch of toffee and liquorice. A rich honeyed texture carries a pleasantly heavy character. Finish: Silky and soothing, with a warming gingery quality. This A’Bunadh is a very flavourful whisky and far preferable to the more common Aberlour 10. Fun to drink.

The Cardhu 12 is a well balanced, gentle single malt from Speyside. Good body, decent sweetness, richness, streaks of smoke, apple peels, bruised pears. A much-loved single malt, Cardhu is an easy-going, charming Speysider. With clean, crisp oak and sweet malt evoking flavours of honeyed flapjacks and home-made caramel squares, this is one for the sweet-toothed among you. This particular bottle is of Cardhu single malt before Diageo started making the ”phoney” pure malt stuff.

Bacchanalia Gala Dinner + Auction 2016 Page 76 Lot #470 SCAPA 14-YEAR-OLD WHISKY Value: $350 One 750 ml bottle.

From a tiny distillery in Orkney, Scapa is often overlooked in favour of its more famous neighbour, Highland Park. This 14 year old was quite a short-lived bottling—it was introduced by then new owners Chivas Brothers to replace the old 12 year old, but was subsequently superseded by the now-familiar 16 year old standard official bottling. Which in the mind and palates of whisky lovers was a massive error: Scapa 14 is far superior to the 16. No longer available in any BC Liquor stores – this may be the last bottle in Canada. Worth every penny! An exceptionally smooth and most satisfying after-dinner dram, which avoids being unduly unctuous, as are some. Light, caramel and gentle vanilla overtones are bolstered by subtle background peatiness. At 40%, it’s a perfect balance.
