Tequila as we know it was born in 1758 when the Cuervo family began commercially distilling the agave plant, and was followed later by the Sauza family in 1873. In order to be classified as tequila, the liquid must be produced in the state of Jalisco and is typically 38% alcohol content, although the U.S. passed a law requiring tequila to contain at least 40% alcohol to be sold in the States. It is produced in three styles, Blanco, Reposado and Anejo.
Blanco tequila is aged or "rested" in white oak barrels from 2-11 months to become Reposado, and rested for 12 months or longer to become Anejo.
Mezcal, also made from blue agave, is similar to its cousin tequila, with one main difference; instead of boiling the agave, mezcal is made by roasting the agave, giving the final product a smooth smokey flavour. In fact, the word mezcal means, "oven-cooked agave" Most mezcal comes from Oaxaca, and is made from the heart of the agave plant, known as the Pina.
