A whole-food based recipe using a variety of vegetables, whole grains, seeds and nuts

Ingredients: • 2 cups cooked brown basmati rice • 1 hefty handful of currants (cranberries/raisins) • 1 onion, finely chopped • 2 teaspoons olive oil • 1-2 cloves garlic, finely minced • salt to taste • 3 celery stalks, finely chopped • 3 carrots finely chopped • 4 bell peppers (tops removed, sliced lengthwise) Directions: • ¾ cups chopped baby spinach • 2/3 cup crushed almonds and pumpkin seed mixture 1. Preheat oven to 350 degrees. 2. Make grain according to package directions and set to the side. 3. Sauté onion and garlic with oil for 1 minute. Add celery and carrots and sauté for 5 minutes or until they start to wilt (you can add the remaining pepper tops that were trimmed initially to this sauté) 4. Turn off burner, add seeds, almonds and currents to veggies, toss to coat with EVOO. Add sea salt to taste. 5. Combine the grain and veggie mix in a bowl, add chopped spinach and set to the side. 6. Steam peppers on the stovetop for about 6-8 minutes until they are tender. 7. After slicing peppers lengthwise, lay open faced up on a Pyrex (casserole) dish, which has been coated with EVOO, and stuff with the rice & veggie mixture. 8. Bake for 20-25 minutes and serve!
