Youth Explore Trades Skills Baker Decorate with Basic Garnishes Description In this activity, students will identify, make, and select a variety of basic garnishes for decorating baked goods. This includes the writing of a basic greeting on a cake. This activity can be paired with the Make Cupcakes or Make Holiday or Themed Cookies Activity Plans. Lesson Objectives Students will be able to: • understand the meaning of garnish as pertaining to baked goods and pastry • decide what kind of garnish is appropriate • make a simple paper cone for piping • apply garnish as appropriate for specific products • understand and practise basic baked good presentation, and • prepare various garnishes such toasted nuts and seeds; fruit zest, whipped cream; and chocolate. Terminology Garnish: An adornment or embellishment that decorates a food item. Marzipan: A pliable mixture of almond paste and sugar that can be moulded into shapes used as a decoration. Paper cone: A triangle of parchment paper cut and shaped to make a conical icing bag. Piping: The action of squeezing a garnish through a cone to write a message on a cake or make a decorative border. Rolled fondant: A pliable mixture of sugar and gums, often used to decorate cakes; also coloured and dried to make decorative shapes Royal icing: A simple decorating icing that can be piped—typically used for decorating cakes and cookies. Fish Stew This is a super easy, hearty recipe that’s also very versatile. You can use any amounts of different fish and shellfish and to make it even more filing, add some cooked new potatoes, chickpeas or beans. Greens like spinach, green beans or peas also work really well. Using our homemade fish soup as a base, this dish is inspired by the famous French fish stew bouillabaisse from the port city of Marseilles. It’s a very fragrant stew to which you can add a variety of fish and shellfish. All of the following ingredients are available in our shop. Ingredients: 200g salmon or mixed firm fish 1 tub Sandys fish soup ¼ bunch of parsley roughly chopped 1 lemon 1 pot of Rouille red pepper sauce - optional Tip: To test the fish use a thin knife or skewer and push into the thickest part of the fish, if it slides in with no resistance or springiness it’s done! Place a large dollop of Rouille sauce on top the stew, with a lemon wedge and dressing of parsley before serving. Method: - Put the sauce in a pan - Place the salmon on top placing a lid on the pan and steadily bring the stew up to the boil - Once it starts to bubble, reduce the heat to a gentle simmer until the fish is cooked this should take about 12 – 15 minutes - If using raw shellfish cook in the sauce for approximately 5 minutes until they are all open - If using our frozen seafood mix or cooked shellfish make sure it is defrosted and simply heat through in the sauce - If the sauce gets to thick just add a touch of water . -

Sammy’s history Sammy Schloegel was born and raised in New Orleans. His interest in cooking came from his watching his Italian grandparents’ love for preparing amazing food. Sammy began working at the Elysian Fields lo- cation at the age of 15 for his uncle, John Shambra, who owned a butcher shop. After his uncle passed away, Sammy purchased the building and business in 1991. Sammy saw a need in the area for a good place to grab a sandwich at lunchtime, so Sammy and his wife, Gina, started making overstuffed po-boys for an inexpensive price while still running the butcher shop. Before they knew it, they were selling more sandwiches than they ever expected and so they added a few tables and added hot lunch for each day of the week. Then came more tables, more sandwiches and more hot Breakfast Menu lunch choices, and needless to say, more employees. Sammy and Gina’s hard work and great food has not gone unnoticed. Monday-Saturday Bret Anderson, of the Times Picayune named their garlic stuffed roast 7:00am-10:30am beef po-boy as one of the 10 best in the city. WWL-TV’s Unknown Food Critic stated that Sammy’s hamburger is the best in the city. Sammy’s Lunch daily took the blue ribbon from the Po-Boy Festival on several occasions for Monday-Thursday 10:30-5:00 the garlic stuffed roast beef and the Ray Ray. Broiler Chickens
The Life of: Broiler Chickens Chickens reared for meat are called broilers or broiler chickens. They originate from the jungle fowl of the Indian Subcontinent. The broiler industry has grown due to consumer demand for affordable poultry meat. Breeding for production traits and improved nutrition have been used to increase the weight of the breast muscle. Commercial broiler chickens are bred to be very fast growing in order to gain weight quickly. In their natural environment, chickens spend much of their time foraging for food. This means that they are highly motivated to perform species specific behaviours that are typical for chickens (natural behaviours), such as foraging, pecking, scratching and feather maintenance behaviours like preening and dust-bathing. Trees are used for perching at night to avoid predators. The life of chickens destined for meat production consists of two distinct phases. They are born in a hatchery and moved to a grow-out farm at 1 day-old. They remain here until they are heavy enough to be slaughtered. This document gives an overview of a typical broiler chicken’s life. The Hatchery The parent birds (breeder birds - see section at the end) used to produce meat chickens have their eggs removed and placed in an incubator. In the incubator, the eggs are kept under optimum atmosphere conditions and highly regulated temperatures. At 21 days, the chicks are ready to hatch, using their egg tooth to break out of their shell (in a natural situation, the mother would help with this). Chicks are precocial, meaning that immediately after hatching they are relatively mature and can walk around. -

There is considerable evidence of the effective role that participation in these programs plays in alleviating food insecurity and poverty, and in providing the nutrients students need for growth, development, learning, and overall health, especially for the nation’s most vulnerable children and adolescents.
