Ingredients Materials ● 2 eggs ● Mixing bowl ● 3/4 Lb all purpose flour ● Hands or spatula (340 g) ● Pot or pan ● 2 oz caster sugar (55 g) ● Stove ● 2 oz unsalted butter (55 g) ● Plastic wrap ● 1 organic lemon ● Paper towels ● 1 organic orange ● Serving tray or bowl ● 3 tbsp candied fruit ● 2 tbsp sugar decorations or sprinkles ● 2 drops Rum or Brandy (not necessary) ● 1 drop Anise flavor ● 1 pinch table salt ● Sesame oil How to Make Struffoli Steps 1. This is a family tradition that has been passed down from generation to generation. I hope you enjoy the treat! 2. Let the butter soften 30 minutes into the oven turned off with the light on, then cut it into pieces and stir with a fork until smooth and inflated. 3. After that, grate the lemon and orange to obtain zests. 4. Now, crack the eggs and pour them into a bowl along with the sugar, the softened butter, the lemon and orange zests, 2 drops of Rum or Brandy, 1 drop of Anise flavor, and 1 pinch of salt. 5. Finally, whisk until consistent. 6. Add the flour, a little at a time into the butter and eggs mixture. 7. Pouring the flour, pinch the dough with your fingers until the liquid will be absorbed by the flour, creating a sort of pastry crumbs. 8. Now, compact and stretch out the crumbs until obtaining a consistent dough. 9. Eventually, wrap the dough and store into the lower part of the fridge at least 2 hours. -

Ulundhu Kali / Uluntangali / Urad Dal Halwa – South Indian Recipe Ulundhu Kali / Uluntangali is a South Indian traditional delight. This traditional sweet is specially given to teen girls when they attain puberty mainly because as it strengthens the pelvic bones and muscles. This sweet is made of super nutritious ingredients like urad dal (Protein), palm jaggery(Iron) and gingelly oil (Vitamin E). You can have this healthy and nutritional dish for breakfast or as snacks. Good for adults and kids. Ingredients 3/4 Cup of Urad Dal (White) 1 and 1/4 Cup of Palm Jaggery 1/4 Cup of Gingelly Oil Pinch of Salt 1/2 Cup of water or as needed Method Grate the palm jaggery and keep it aside. Dry roast the urad dal lightly, let it cool for sometime. In a pan, heat the water, after it boils, add the palm jaggery , let it be in the flame until jaggery melts and stir it occasionally. Once it done, turn off the flame Powdered the urad dal finely or rava consistency using mixie or spice grinder. Using tea strainer, strain the jaggery syrup to get rid of impurities. In a medium flame, add the Jaggery syrup to the same pan, add a pinch of salt, bring it to a boil, add urad dal powder little by little and stir well to avoid lumps. Add oil little by little and keep on stirring until the mixture leaves the sides of a pan. Serve hot or cold with a tsp of ghee. Make a small balls, in the center, add a tsp of ghee. -

SOUTH INDIAN CUISINE South Indian Cuisine is a term used to refer to the cuisines found in the four southern states of India, namely Andhra Pradesh, Karnataka, Kerala and Tamil Nadu. As opposed to North Indian cuisine, there is limited use of garam masala and other dried spices except cardamom, black pepper and turmeric. South Indian cuisine is rice based. Rice is combined with lentils to make wonderful dosas, idlis, vadas and uttapams. These items are glorious and delicious besides being nourishing and digestible (due to the fermenting process). They are combined with sambhar (dal), rasam (tamarind dal), dry and curried vegetable and pachadi (yogurt). Their rice preparations are also masterpieces like biryani from Hyderabad, lemon rice and rice seasoned with coconut peanuts, tamarind, chilies, curry leaves, urad dal and fenugreek seeds. South Indian chutneys are made of tamarind, coconut, peanuts, dal, fenugreek seeds, and cilantro. Meals are followed by coffee. South Indian dals and curries are more soupy than North Indian dals and curries. South Indian cuisine is also hotter. Coconut milk straight from the nut is a common beverage and sight in South India. Coffee is very popular in South India and Madras coffee is popular in South Indian restaurants throughout the world. Storage condition of a crop is dependent on the function of composition, resistance to attacks by microorganisms, external conditions of temperature and gases in the environment • The most important characteristic of freshly harvested fruits and vegetables is that they are alive and respiring. • Ripening rendering the produce edible; as indicated by by taste. During ripening, starch is converted to sugar. When respiration declines, senescence (it ends at the death of the tissue of the fruit) develops in the last stage. • Maturity is indicated by skin colour, optical methods, shape, size, aroma, fruit opening, leaf changes and firmness. • Low temperature also disrupt the complex sequence of biochemical reactions taking place in plant tissue and cause a disorder known as chilling injury. • After harvesting decline in the rate of oxygen uptake and Carbon dioxide evolution to a low value is followed by a shark rise to a peak, terminating in pest- climacteric stage. The peak to minimum ratio tends to increase with temperature. this ratio varies among fruits. the slope of the rise varies with species maturity, temperature and the oxygen and Carbon dioxide of the storage chamber. Plant product storage Fresh fruits and vegetable maintain life processes during storage. As long as they are alive, they are able to resist the growth of spoilage organisms to some degree. -

The 4th edition and revised version was developed by the main author with assistance of Tanay Prabhu, BS Student in Biological Sciences, Drexel University, Philadelphia. The previous versions of the tool were developed with the assistance of graduate students Sajida Arsiwala, MS, RD and Bhavna Subhedar, MS and Dr. Kathryn Sucher, Sc.D, RD, Professor Emeritus, Department of Nutrition, Food Science and Packaging at San Jose State University. About the Author Ashwini Wagle, MS, RD is an Associate Professor and Director for the Didactic Program in Dietetics (DPD) in the Department of Nutrition, Food Science and Packaging at San Jose State University. Ashwini Wagle earned her MS in Food and Nutrition from Indiana University of Pennsylvania (IUP) in 93'and is currently a doctoral student in Educational Leadership (Ed.D) at University of New England. She comes to San Jose State University with over ten year experience as a registered dietitian (RD) in several skilled nursing facilities and acute care hospitals in the San Francisco Bay Area. Ashwini Wagle is also involved with several on-campus and off-campus organizations and serves on the committees for organizations such as the South Asian Heart Center at El Camino Hospital, Center for Healthy Aging in Multicultural Populations (CHAMP), Education Committee of the California Dietetic Association (CDA), San Jose Peninsula District of California Dietetic Association (SJPD), Cal-Pro Net Center.
