    FOOD PRODUCTION MANAGEMENT II OBJECTIVES At the end of this lesson, students should be able to demonstrate appropriate skills, and show an understanding of the following: Meat Cooker Mutton and Lamb Beef and Veal Parks, Bacon, Ham and Gammon Game Poultry and Chicken INTRODUCTION In basic food preparation, meat is generally considered to be the flesh of any animal and includes beef, veal, lamb, and pork along with poultry, fish, and shellfish. Poultry and fish, however, often differ from the red meats in preparation and tests for doneness (rare, medium and well done). The word meat comes from the Old English word mete, which referred to food in general. The narrower sense that refers to meat, which does not include sea food, developed over the past few hundred years and has religious influences. Meat, especially beef, is prepared in many ways, as steaks in stews, fondue, or as dried meat. It may be ground then formed into patties (as hamburgers or croquettes), loaves, or sausages, or used in loose form (as in "sloppy Joe" or Bolognese sauce). Some meat is cured by smoking, pickling, preserving in salt or brine (see salted meat and curing). Other kinds of meat are marinated and barbecued, or simply boiled, roasted, or fried. Meat is generally eaten cooked, but there are many traditional recipes that call for raw beef, veal or fish. Meat is often spiced or seasoned, as in most sausages. Meat dishes are usually described by their source (animal and part of carcass) and method of preparation. Meat is a typical base for making sandwiches.

    70% Of All Bacon In The US Is Eaten At Breakfast Time On December 30th each year, bacon lovers celebrate one of nature’s favored gifts on Bacon Day! In the United States and Canada, bacon is made from the pork belly. Elsewhere in the world, the side and back cuts of pork are used. The meat is cured in either a salt brine or in a salt pack. It is then either dried, boiled, or smoked. The origins of Bacon stretches back into the middle ages, with the name originating in Middle English from the word “Bacoun”. Following it back you find it in France as Bako, Germany as Bakko, and old Teutonic as Backe. All of these words mean “back”. But that’s not even the earliest example of bacon, the first bacon was known to come from the Romans, and was known as ‘Petaso’. Bacon is one of the oldest processed meats. The Chinese were the first to cook salted pork bellies over 3000 years ago. The first bacon factory opened in 1770. But in the 18th century, a man by the name of John Harris opened the first bacon processing plant. Mr. Harris had developed a special brining solution called the “Wiltshire Cure,” which is still used today. You may recognize the phrase “bringing home the bacon” as a reference to making money. But in 12th century England, this phrase meant something completely different. Back then, churches would award a side of bacon (which they called a “flitch”) to any married man who swore before God that he and his wife had not argued for a year and a day.

    Pre-Seventeenth Century English Bacon: Reconsidering a Staple By: Noah Arney ____________________________________________________________ Abstract: This research fills a gap in historical food scholarship by examining 56 medieval and early modern cookery books published between the thirteenth and seventeenth centuries in England and western Europe to determine methods used in curing bacon prior to the seventeenth century. It affirms important differences in bacon making from our modern versions and suggests how pre- seventeenth century recipes might taste. Key Words: bacon, lard, pork, meat curing, cookbooks, Middle Ages, early modern period Introduction Bacon was the main meat eaten in England for the entirety of the thirteenth century (Woolgar 2006: 91), however little is written of its medieval history. I have not yet discovered an academic overview of what bacon was like before the commercial production of the eighteenth century, except for brief, though competing, references to the creation of pre-modern bacon in the work of food historians Peter Brears (2008) and Ken Albala (2003). When Brears discusses the creation of bacon in Cooking and Dining in Medieval England, he states only that “there appears to be no evidence for the use of saltpetre, sugar or smoking in medieval meat preservation, only salt,” overly relying on a presumed absence of evidence (148). In contrast, in Food in Early Modern Europe, Albala appears to lump pre-eighteenth century creation of bacon with later techniques that came to dominate in the modern era (98): Smoke dries food, and in combination with a previous soaking in brine, it prevents bacteria from forming and flavours the food as well.
