The Wine

Elegance and race, on a background of consistancy with a legendary suppleness, all is here in Clos de Vougeot for the senses. the wine is strong bright, deep. The first nose reveals with delicacy, to express an impressive range of fruitty, floral and spicy evocations. The attack is sensual, both earth and vibrant in the same movement. Still slightly tight at the time of its youth, the wine associates when ageing the velvet of Vosne-Romanée to the fineness of Chambolle-Musigny. On the finish, the liquorice and white pepper evocations sign the greatness of the historical “climat”. It will go well with a slow-roast shoulder of lamb with mashed chestnuts and candied porcini, a pheasant with apples, but also Époisses and Mont d’Or for cheese. Best served at 17 ° C.. Background The name Clos de Vougeot is closely associated to the abbey of Citeaux, whose monks, when they set up in that place and cultivated the vine more than nine hundred years ago, have given its name to the Grand Cru emblem of the Burgundy vineyard. The term “clos”, from the Latin “clausus” (closed), is frequently used in wine terminology. It refers to the limits of the plot, surrounded by a wall. Subsoil and Soil The subsoil of Clos de Vougeot is complex. The western part, the highest, is made up of Comblanchien Limestone. The middle part lies probably over the Premeaux Limestone. To the east, loam mixed with clay result from the weathering of a more recent deposit, marls aged Oligocene or Plio-Quaternary. the soils, with a brown or reddish-brown color, whose thickness increases from the top to the bottom of the clos, combine stones and loam.
