Using Burgundy Isolates yeast, the wine underwent only partial malo-lactic (ML) fermentation in tank. Aged in 100% French oak for 10 months. TECH INFO: pH: 3.56 - TA: 5.99 g/L - Alcohol: 13.5 % SERVING SUGGESTIONS: Ideal with cream sauces, seafood, and poultry dishes. Tasting Notes CABERNET SAUVIGNON This Cabernet Sauvignon has a rich garnet color with deep, purple layers. On the nose, this wine has aromas of plum and blackberry, layered with elegant floral tones of lavender and sage that enhance its vanilla tones. Fruit explodes on the palate with bold texture and a juicy mouthfeel. Bright acidity compliments the rich flavor profile and delivers a long finish . VARIETAL: 90% Cabernet Sauvignon, 7% Merlot, and 3% Tannat PRODUCTION AREA: Grapes are sourced from vineyards on the North Coast (Napa, Sonoma, Lake and Mendocino Counties), Lodi and Paso Robles. Coastal growing sites add layers of ripeness, fruit flavors and acidity structure in this hand tended fruit. VINIFICATION: Harvested in late September. All of the fruit is hand-sorted, fully destemmed and crushed in stainless steel tanks. Cold soaks (5-7 days), warm fermentations (85-90 degree range), and moderate pump-overs. Total skin contact ranged from 18-25 days. Full malolactic fermentation on lees using Native yeast and D254. Aged for 9 months in 90% French and 10% American oak. Only 10% new oak is used each year. TECH INFO: pH: 3.62 - TA: 5.88 g/L - Alcohol: 13.5 % SERVING SUGGESTIONS: An excellent match for the most flavorful of foods. Enjoy with red meats, including grilled beef and lamb, pasta dishes, rich sauces and ripe cheeses. Tasting Notes PINOT NOIR Vibrant purple-garnet in color with enticing aromas of cherry, raspberry and plum, and a faint violet hint surrounded by subtle spice from integrated French oak barrel aging. Well balanced palate with refreshing acidity and luscious tannins yielding a plush weight and a soft, silky mouth feel. VARIETAL: 100% Pinot Noir PRODUCTION AREA: A blend of Sonoma Coast vineyards, Santa Rita Hills Vineyards in Santa Barbara and Santa Lucia Highlands and Vineyards in Monterey. A full spectrum of Pinot Noir clones are represented in this wine. Older traditional California selections such as Martini, 2A, and Pommard are complemented by a variety of Dijon clones (115, 667, 777 and 828). VINIFICATION: Grapes are harvested in early September. All of the fruit is hand-sorted and fully destemmed with no crushing. Cold soaks (4-5 days), warm fermentations (85-90 degree range), and minimal punch downs. Total skin contact ranges from 11-18 days, with wine put to barrel on the lees for malolactic fermentation. Racking is minimal, with only one base blend to allow the new wine to “marry” in the barrel before bottling. Native yeast is used on small lots using cultured burgundy isolates. Aged 10 months in 100% French oak (25% new oak). TECH INFO: pH: 3.72 - TA: 0.542 g/100 ml - Alcohol: 14.1 % SERVING SUGGESTIONS: Enjoy with grilled and roasted meats such as lamb, pork or chicken and dishes made with light sauces. Employees are happy, the bank is happy, investors are happy, and you’ve managed to get your work week down to a manageable 70 hours. Labor expenses are steady and manageable, food cost is at the industry average, and beer cost is “around” 10 percent. That’s good, right? Right? If you don’t have a clear view of the cost of your beer, you may be pouring dollars down the drain (literally). A well-established cost analysis will not only provide valuable data on the real cost of selling your suds, but may also identify areas of opportunity such as purchasing, labor and compensation analysis, and reducing waste. Many different methods exist for calculating beer cost, and in this article I’ll describe the ones I find valuable, in addition to a few I don’t (and why). These biological indicators use an aluminium support (coupon), that is not permeable to hydrogen peroxide. Aluminium coupon has been inoculated with Geobacillus stearothermophilus (ATCC 7953) spores and has been introduced into a Tyvek®/Polytene envelope. Each package contains a culture medium, STERI-TEST MEDIUM, in glass test tubes with screw cap closures. The medium is validated for use with coupons and meets the U.S. Pharmacoopoeia Revision XXII growth promotion guidelines. Each package contains also a Certificate of Performance that indicates a certified population , D-value (121°C), survival time, kill time, species, lot number and expiration date. COMPOSITION Coupons contain Geobacillus stearothermophilus (ATCC 7953) spores in concentration:1-5 x106CFU/coupon. Each coupon is contained in an envelope. Each envelope is printed with product name, lot number and expiration date. STERI-TEST MEDIUM is a sterile modified soybean casein digest broth with a pH indicator. Each tube is printed with product name, lot number and expiration date. PRINCIPLE Spores are completely killed if the sterilization cycle has been efficient . In this case, during the following incubation in the Steri-Test Medium tubes, included in the package, spores are not able to grow and to modify medium’s aspect.

    AMPHORA-AGED COS WINE: NEW OR ANCIENT There is something simply amazing to view a winery making its top wines in a series of earthenware jars. Is there shock-horror? Yes for a technocrat trained on the finer points of grades of stainless steel. But no for someone on a path of discovery to understand just what the practitioners do when there is a choice to return to the roots of winemaking practice. And the use of clay pots has been a natural winemaking event year-on-year in Georgia for as far back as 6000 years BC. Recently a colleague advised me that a 2012 trip to this old world winemaking country included a visit to a monastery using the clay pot containers continuously for 1000 years (a lot of vintages there to build up tartrate!) So I was recently on the path of discovery in Sicily to visit two famous properties using earthenware jars for winemaking and aging (COS in Vittoria) and Cornelissen (on Etna) who ages new wine similarly. There is a space in between with the technology path-that of using oak barrels as storage vessels, and over the past decade used, large (3-5,000 litre) format casks have proved to be valuable aging means for high quality wines. Casks displaced earthenware vessels as they were more practical. However keeping large casks fresh and clean is a never-ending job, and at times capable of going wrong (cask has to be burnt). Also the cask remains practical for making larger volumes of wine, while re-introducing the clay pot makes sense for small parcel winemaking as pot management is a lot simpler than in the 15th century.

Thus, material and component contamination is common. The most common source of resin contamination is water. Generally oil, grease and dust are observed in the contamination of products as well. Material Feed The feed to machines involved in processing thermoplastics is very often a mixture of virgin (new) material, regrind, and colorant (often in the form of a master batch). All of these materials must be kept clean and dry. A controlled ratio of the materials must also be used if consistent machine operation and component quality (such as surface appearance) are to be maintained. The extruder can be fed with plastics (resins) or compounds in various forms. The feed may be fine powder, regrind material or virgin pellets. If the material is available in more than one form, feeding problems will probably occur if a mixture of forms is used. In terms of feeding efficiency, spherical granules (of approximately 3 mm/0.125 in diameter) are the most efficient, while fine powders are usually the worst.
