Dean Toste* Despite the tremendous advances of the past four decades, chemists are far from being able to use chiral catalysts to con- trol the stereoselectivity of any desired reaction. New concepts for the construction and mode of operation of chiral catalysts have the potential to open up previously inaccessible reaction space. The recognition and categorization of distinct approaches seems to play a role in triggering rapid exploration of new territory. This Review both reflects on the origins as well as details a selection of the latest examples of an area that has advanced considerably within the past five years or so: the use of chiral anions in asymmetric catalysis. Defining reactions as involving chiral anions is a difficult task owing to uncertainties over the exact catalytic mechanisms. www.nature.com/scientificreports OPEN Monitoring of heat‑induced carcinogenic compounds (3‑monochloropropane‑1,2‑diol esters and glycidyl esters) in fries Yu Hua Wong1, Kok Ming Goh1,2, Kar Lin Nyam2, Ling Zhi Cheong3, Yong Wang4, Imededdine Arbi Nehdi5,6, Lamjed Mansour7 & Chin Ping Tan1* 3‑Monochloropropane‑1,2‑diol (3‑MCPD) esters and glycidyl esters (GE) are heat‑induced contaminants which form during oil refning process, particularly at the high temperature deodorization stage. It is worth to investigate the content of 3‑MCPD and GE in fries which also involved high temperature. The content of 3‑MCPD esters and GE were monitored in fries. The factors that been chosen were temperature and duration of frying, and diferent concentration of salt (NaCl). The results in our study showed that the efect was in the order of concentration of sodium chloride < frying duration < frying temperature. The content of 3‑MCPD esters was signifcantly increased whereas GE was signifcantly decreased, when prolong the frying duration. A high temperature results in a high 3‑MCPD ester level but a low GE level in fries. The present of salt had contributed signifcant infuence to the generation of 3‑MCPD. The soaking of potato chips in salt showed no signifcant efect on the level of GE during the frying. The oil oxidation tests showed that all the fries were below the safety limit. Hence, the frying cycle, temperature and the added salt to carbohydrate‑based food during frying should be monitored. Deep-fat frying is commonly being used to process food. During the process, heat transfer between the fried food and oil is occurs. -

METHOD 8315A DETERMINATION OF CARBONYL COMPOUNDS BY HIGH PERFORMANCE LIQUID CHROMATOGRAPHY (HPLC) 1.0 SCOPE AND APPLICATION 1.1 This method provides procedures for the determination of free carbonyl compounds in various matrices by derivatization with 2,4-dinitrophenylhydrazine (DNPH). The method utilizes high performance liquid chromatography (HPLC) with ultraviolet/visible (UV/vis) detection to identify and quantitate the target analytes. This method includes two procedures encompassing all aspects of the analysis (extraction to determination of concentration). Procedure 1 is appropriate for the analysis of aqueous, soil and waste samples and stack samples collected by Method 0011. Procedure 2 is appropriate for the analysis of indoor air samples collected by Method 0100. The list of target analytes differs by procedure. A stirred mixture of 124.7 g (0.81 mol) of 2-methyl-3-nitrophenol (Note 1), 113.2 g (0.90 mol) of benzyl chloride, 112.2 g (0.81 mol) of anhydrous potassium carbonate, and 800 mL of dimethylformamide (DMF) is heated at 90°C for 3 hr. Most of the DMF is removed on a rotary evaporator (20 mm) and the oily residue is poured into 400 mL of 1 N sodium hydroxide and extracted with ether (3 × 800 mL). The combined extracts are dried (Na2SO4), filtered, and evaporated to give 203.5 g of yellowish solid. Recrystallization from 1 L of methanol cooled to 0°C affords 177.6 (90%) of 6-benzyloxy-2-nitrotoluene as pale-yellow crystals, mp 61–63°C3 (Note 2). B. (E)-6-Benzyloxy-2-nitro-β-pyrrolidinostyrene. To a solution of 175.4 g (0.72 mol) of 6- benzyloxy-2-nitrotoluene in 400 mL of DMF are added 102.5 g (0.84 mol) of N,N-dimethylformamide dimethyl acetal (Note 3) and 59.8 g (0.84 mol) of pyrrolidine. This method describes the sampling and analysis procedures of the acetyl acetone colorimetric method for measuring formaldehyde emissions in the exhaust of natural gas-fired, stationary combustion sources. This method, which was prepared by the Gas Research Institute (GRI), is based on the Chilled Impinger Train Method for Methanol, Acetone, Acetaldehyde, Methyl Ethyl Ketone, and Formaldehyde (Technical Bulletin No. 684) developed and published by the National Council of the Paper Industry for Air and Stream Improvement, Inc. (NCASI). However, this method has been prepared specifically for formaldehyde and does not include specifications (e.g., equipment and supplies) and procedures (e.g., sampling and analytical) for methanol, acetone, acetaldehyde, and methyl ethyl ketone. Chapter 14 – Aldehydes and Ketones 14.1 Structures and Physical Properties of Aldehydes and Ketones Ketones and aldehydes are related in that they each possess a C=O (carbonyl) group. They differ in that the carbonyl carbon in ketones is bound to two carbon atoms (RCOR’), while that in aldehydes is bound to at least one hydrogen (H2CO and RCHO). Thus aldehydes always place the carbonyl group on a terminal (end) carbon, while the carbonyl group in ketones is always internal. Like aldehydes, placing a collection of double bonds adjacent to a ketone carbonyl generally makes the substance more fragrant.
