It pairs well with important Langa wines but is ideal with important dark craft beer too. Occelli al pepe nero e bacche rosa is produced from sheep’s and cow’s milk, Occelli al Pepe Nero e Bache Rosa ages for at least four months in the cellars of Valcasotto where it matures on boards of wood of this valley. In the body, grains of black and pink pepper enrich the range of its flavours and aromas. It comes in a low square form with the shape of a knot impressed by the cloth in which the curd is wrapped. Its consistency is soft and pliable, its flavour milky – buttery. Its form and colour recall the “losa”, stone used to cover mountain houses. Pairs well with reds of medium-body and with aromatic honey. Beppino Occelli recommends this cheese for the preparation of fillings and fondues. Verzin di vacca – a marbled cheese made from full cream cow’s milk. Its name echoes the famous marble of the Frabosa quarries, as the paste is white with green (“verzin” in the Piedmontese dialect) streaks. Creamy and spreadable, Verzin can be paired with a good red, even young, but a goodbodied still white will also go well with it.
