A torpedo slams into the side of our ship, flinging me out of my bunk. The ship is transporting thousands of troops and hundreds of nurses. It is December 1942, and our country is at war. I am Margaret Bourke-White, the only woman photographer covering this war. The U.S. Army Air Forces has handed me a plum assignment: photographing an Allied attack on the Germans. I wanted to fly in one of our B-17 bombers, but the top brass ordered me to travel instead in the flagship of a huge convoy, headed from England through the Straits of Gibraltar towards the coast of North Africa. It would be safer than flying, the officers argued. As it turns out, they were dead wrong. Beneath the surface of the Mediterranean, German submarines glide, silent and lethal, stalking their prey. One of their torpedoes has found its mark. I grab my camera bag and one camera, leaving everything else behind, and race to the bridge. I hear the order blare: Abandon ship! Abandon ship! There is not enough light and not enough time to take photographs. I head for Lifeboat No. 12 and board with the others assigned to it, mostly nurses. We’ve drilled for it over and over, but this is not a drill. -

More than 200 years later, we’re a smorgasbord of traditional and contemporary cuisines. LOCAL FOOD • Since 1905, the Rochester Public Market has offered some of the area’s best seasonal produce, meat, fish, poultry, dairy products and baked goods. • Legendary Wegmans — still family owned after all these years - has enough prepared foods, and seating areas, to be one of the region’s best places for lunch or dinner. • Myriad farmers markets from May to October, some of which continue indoors year round. Some farms also have year-round stores or delivery services. • Since 1880, Rochester has been home to Zweigle’s, originator of the “white hot,” a concoction of spiced beef, pork and veal. The company also makes all-beef hot dogs, deli meats and sausages, including several chicken varieties. • Nearly every casual eatery has come up with its own version of the “garbage plate”made famous by Nick Tahou’s restaurant — a concoction of macaroni salad, fries, hot dogs or hamburgers and hot sauce that can only be appreciated by tasting it. Some upscale restaurants have created gourmet varieties, too. • Chicken French, an old Rochester recipe that uses an egg-based batter and a lemon- tinged sauce, has also found its way onto various menus and spun off “French-style” seafood and vegetables — particularly artichokes. Sweet Treats • Abbott’s Frozen Custard has been making their famous custard ice cream for more than a century. • Stever’s, a Park Avenue institution that has produced homemade candy since 1946. -

Tasting America One Hotdog at a Time Alabama: Birmingham Hot Dog, Gus's Hot Dogs One of the oldest hot dog stands in a city that was once home to countless frank purveyors, Gus’s is the place to try the Birmingham hot dog developed by the city’s early Greek immigrants. Both the regular and the "special" dogs feature a half pork-half beef weenie charred on the 70- year-old grill and served in a steamed standard issue bun with yellow mustard, chopped white onion, sauerkraut and spice-scented special sauce that’s like a sweeter, tangier version of New York pushcart-style onions. The special, with the addition of ground beef, is city’s storied hot dog claim to fame, as owner Lee Pantazis sees it. "A small piece of history wedged in a bun covered in sauce," he says. Alaska: Reindeer Dog, International House of Hot Dogs Long before the wild game sausage trend took over gastropub menus across the United States, Anchorage residents where noshing on dogs showcasing one locally ubiquitous, otherwise rare ingredient: reindeer. Reindeer has been a summertime street cart specialty in the Last Frontier for more than two decades. But International House of Hot Dogs serves its McKinley Dog throughout the year - sleigh- pulling season included. It starts with a hearty and heavily spiced Polish-style reindeer sausage in a bun with a simple combination of sautéed onions and a sweet and smoky homemade chipotle sauce. You heat it through, plop it on a bun, squirt on some mustard, and call it dinner. But there’s a big difference between not screwing something up and turning it into a paradigm-shifting, transcendental dining experience. And there are lots of hot dogs out there that have the power to change your life. The perennial grill mate to hamburgers, the hot dog sometimes gets the short end of the stick, charring at the back of the grill while juicy burgers are snatched up as soon as they hit the right temperature. But there’s a science, if not an art form, behind constructing the perfect hot-dog-eating experience. That experience was introduced more than 100 years ago, when German immigrants first brought over their frankfurters and started selling them on the cheap, at places like Coney Island’s Nathan's, arguably ground zero for American hot dog consumption. But then something interesting happened. People began developing their own spice mixes and making their own hot dogs, and every region and group of people put its unique stamp on the snack. In Chicago they top all-beef dogs with mustard, fresh tomatoes, onions, sport peppers, bright green relish, dill pickles, and celery salt. Spicy Texas Red Hots are popular in New Jersey, but not in Texas, while Greek immigrants in Michigan concocted a cinnamon-rich beef chili that came to be known as Coney sauce, but it has nothing to do with Coney Island. -
