It is perhaps the first scholarly attempt to study the vegetarian community in China that does not treat it as an Oriental phenomenon isolated from any outside influence. -

S ECTION 2 FINDING S ON TH E EXTERNAL ENV IRONMENTS AND EV ERYDAY FOOD P RACPRACRACTICESRACTICESTICESTICES INTRODUCTION This first section on the findings contains Chapters 4 and 5. In Chapter 4 the external environments of the participants are described. This includes not only an account of the geographical location and physical environment of Mmotla but also refers to important aspects of the socio-cultural environment of the participants. In Chapter 5 the everyday food practices of the participants are contextualised by giving a description of how they view and use food. The contemporary eating patterns as they are followed on weekdays and over weekends are reported on and interpreted. This section comprises two chapters entitled: Chapter 4: External environments of the participants Chapter 5: Everyday food practices CH AP TER 4 EXTERNAL ENV IRONMEIRONMENTSNTS OF TH E P ARTICIP ANTS 4.1 INTRODUCTION Human food choice always takes place within the boundaries of what food is available, accessible and acceptable to people and is primarily determined by the external environments in which they live as described in Chapter 2 (see 2.2.1). Each of these environments, namely the physical, economic, political and socio-cultural, provides both opportunities and constraints for human food consumption (Bryant et al., 2003:10). This exemplifies the contention that where people live contributes to their potential food choices (Kittler & Sucher, 2008:12; Bryant et al., 2003:11). In this first chapter on the findings of the study, the external environments of the participants are sketched to contextualise the contemporary food practices of the Mmotla community. -

The study sample consisted of 132 children from 3 months to 1$ years of age, whose parents belonged to the congregation of the Vishwa Hindu Parished Temple in Bur- naby, B.C. In the dietary assessment of nutritional status, a 24-hour diet recall and a food habits questionnaire were em• ployed on the 132 children. The Canadian Dietary Standard (revised 1975) and Nutrition Canada categories were used for an evaluation of their dietary intake. -

Pouring Plates from Prepared Bottled Media Primary Hazard Warning Never purchase living specimens without having a disposition strategy in place. When pouring bottles, agar is HOT! Burning can occur. Always handle hot agar bottles with heat-protective gloves. For added protection wear latex or nitrile gloves when working with bacteria, and always wash hands before and after with hot water and soap. Availability Agar is available for purchase year round. Information • Storage: Bottled agar can be stored at room temperature for about six months unless otherwise specified. Never put agar in the freezer. It will cause the agar to breakdown and become unusable. To prevent contamination keep all bottles and Petri dishes sealed until ready to use. • Pouring Plates • Materials Needed: • Draft-free enclosure or Laminar flow hood • 70% isopropyl alcohol • Petri dishes • Microwave or hot water bath or autoclave 1. Melt the agar using one of the following methods: a) Autoclave: Loosen the cap on the agar bottle and autoclave the bottle at 15 psi for five minutes. While wearing heat-protective gloves, carefully remove the hot bottle and let it cool to between 75–55°C before pouring. This takes approximately 15 minutes. b)Water Bath: Loosen the cap on the agar bottle and place it into a water bath. Water temperature should remain at around 100°C. Leave it in the water bath until the agar is completely melted. While wearing heat- protective gloves, carefully remove the hot bottle and let it cool to between 75–55°C before pouring. c) Microwave: Loosen the cap on the agar bottle before microwaving. -

CRONKtt Cornell University, Geneva, New York 14456 Received for publication 4 March 1977 Several varieties of soybeans contained generally less than 1 ng of vitamin B- 12 per g. It was found that use of a lactic fermentation typical of tropical conditions during the initial soaking of the soybeans did not influence the vitamin B-12 content ofthe resulting tempeh. Pure tempeh molds obtained from different sources did not produce vitamin B-12. It was found that the major source of vitamin B-12 in commercial tempeh purchased in Toronto, Canada, was a bacterium that accompanies the mold during fermentation. Reinoculation of the pure bacterium onto dehulled, hydrated, and sterilized soybeans resulted in the production of 148 ng of vitamin B-12 per g. The presence of the mold, along with the bacterium, did not inhibit or enhance production of vitamin B-12. Nutritionally significant amounts of vitamin B-12 were also found in the Indo- nesian fermented food, ontjom. Eminent physicians and dietetic reformers of the present day are deeply interested in solving the great problem of wholesome food for human beings, and in introducing food reform in Western countries. Through their efforts thoughtful Americans are be- ginning to know something of the healthful effects of vegetarian diet, and to question whether they shall become vegetarians. This question has never been discussed in the West with so much earnestness as now. Among the ancient Greek philosophers we find strong advocates of vegetarianism in Pythagoras, Plato, Socrates, Seneca, Plutarch, Tertullian, Por- phyry and others; but the vast majority of Western people regard vegetarians with contempt and ridicule. In India this problem was solved by the Hindu phi- losophers long before Pythagoras was born, and in their writings we find logical and scientific arguments against the killing of animals and the eating of animal flesh.
