When all was said and done, their food drive donation weighed in at 276 pounds, which will provide 230 meals to those in need throughout Southeast Texas Food Bank Pantry programs. Cash donations in the amount of $120 were also collected, which will provide an additional 360 meals! n September 14, 2019, the Jr. Junior League volunteered by Ohelping young girls make mermaid tail crafts at the Under The Sea Tea Fundraiser at the Clifton Steamboat Museum. This event helped raise money for the Clifton’s educational programs. Attendees to this event enjoyed sandwiches, treats, crafts, and games. Additionally, the guests were able to meet two different Disney princesses, Moana and Ariel.

ur first General Meeting Oof the year was held at the Laurels on September 10, 2019. With President Shannon Figuroa on maternity leave, Maite Broussard stepped in and called the meeting to order. Each committee had an opportunity to report to the League what to expect this year and about all the opportunities available.

The League is excited that it will be represented in this coming Festival by four lovely young ladies. Maite Broussard announced the Neches River Festival Princesses representing the Junior League of Beaumont for 2020 are Mae Guidry (daughter of Christine Stetson), Sarah Wilson (daughter of Julie Wilson), Caroline Mayo (daughter of Amy Mayo), and Mackenzy Henry (daughter of Wendy Henry). s I continue on my quest to learn how to cook, I can honestly say that I am getting WAY more A comfortable with it and, dare I say, ENJOYING it. For the last two issues of Spinnings, I made a dessert and bread. This month, I felt it was my time to make an entrée. With that decision behind me, I settled on Enchiladas Fantastica from the Dining Without Reservations Cookbook. I love Mexican food and am so blessed to live in Beaumont where it is abundant.

I bet my fellow Spinnings readers have their own favorite enchilada recipes, but I highly encourage you to give this one a try. It is a perfect quick dinner to make during the week and so easy to put together (even for me)! If you are a fan of Mexican food, this is a recipe that you must try.

ENCHILADAS FANTASTICA Dining Without Reservations Serves 12 1 pound of lean ground beef 2 cups of picante sauce, divided 1 (10 – ounce) package of frozen chopped spinach, thawed and drained 2 teaspoons of cumin, divided ½ teaspoon of salt 8 ounces of reduced-fat cream cheese 12 (7-inch) flour tortillas 1 (14-ounce) can diced tomatoes 1 cup (4 ounces) shredded Cheddar cheese
