Isle of Mull Cheddar Sgriob-Ruadh Farm, Tobermory, Isle of Mull Made using raw, whole milk from predominantly Friesian cows fed on grass in summer, hay in winter and fermented whisky grains from the Tobermory Distillery. The Cheese is then cloth bound in lard and matured for eighteen months, developing intense flavour & occasionally some natural blue veining. Richly savoury & nutty in flavour with a lingering tang from the fermented grain.

Morangie Brie (v) Blarliath Farm, Tain, Ross-Shire Similar to traditional French brie, incredibly smooth and creamy but with much more body and maturity. Produced by Ruaridh Stone & Family in Tain, it is soft textured with subtle aromas and a meaty flavour, paired perfectly with ‘half a bottle of red at lunch’ as Ruaridh himself advocates.

The Wee Comrie (v) Strathearn Cheese Company, Comrie, Perthshire Strathearn Cheese Co. operates from Cultybraggan Camp, Comrie – an old WWII prisoner of war camp. Using locally sourced milk, The Wee Comrie is a mild cheese with a semi-soft texture & naturally formed rind from 21-days of maturing, boasting both a aroma and nutty taste.

Lanark Blue (v) Errington Cheese, Lanark, Lanarkshire Made from Errington’s own flock of Lacaune ewe and handmade at their Walston Braehead Farm base. The cheese is matured in traditional stone buildings with a cool & moist climate. Matured for six weeks in the early season and up to eight months for winter, seasonal variations in the flavour are common as a result of only milking between January & September. Spring cheese is fresh and sweet with delicate blue veining, while later production is more pungent & powerful due to much longer maturing.

Strathdon Blue (v) Blarliath Farm, Tain, Ross-Shire Strathdon Blue is firm to touch but yielding and softer in texture when eaten. Prominent blue veining creates an incredibly rich & sweet flavour that develops into steely, metallic after notes with a peppery finish.

The Strathearn (v) Strathearn Cheese Company, Comrie, Perthshire The Strathearn is a soft set cheese, matured for four weeks and washed in a whisky flavoured brine every other day using The Glenturret 10 year old single malt Scotch whisky. The cheese itself is sweet & buttery in flavour with a wonderfully contrasting flavoursome rind.

Blarliath Cheddar Blarliath Farm , Tain, Ross-Shire A traditional cheddar that is double cloth bound and left to mature beyond a year to deliver a flavour that is nutty, slightly sweet & long lasting on the pallet when at full ripeness.
