PORT ELLEN 31 Port Ellen was founded in 1825 on the south shore of Islay by A. K. Mackay & Co. The distillery operated silently until 1966 when it was rebuilt and continued production throughout the 70’s. It was eventually closed in 1983 and then demolished. The warehouses still exist and its reputation is built on the often stunning releases of its remaining stock.

KARUIZAWA 33 Karuizawa is a small town which sits at 800 meters on the slopes of Mount Asama, and is the smallest distillery in Japan. In 1976 the distillery produced Japan’s first 100% domestically produced whisky. Distilled using small pots and aged in small, fine Spanish sherry casks, Karuizawa became known for producing whisky of the finest quality. The initial distillery started as a vinery but was converted to whisky making in 1955 as part of the Japanese Whisky boom. 34 KARUIZAWA Karuizawa is a small town which sits at 800 meters on the slopes of Mount Asama, and is the smallest distillery in Japan. In 1976 the distillery produced Japan’s first 100% domestically produced whisky. Distilled using small pots and aged in small, fine Spanish sherry casks, Karuizawa became known for producing whisky of the finest quality. The initial distillery started as a vinery but was converted to whisky making in 1955 as part of the Japanese Whisky boom. YAMAZAKI 35 The Suntory-owned, Yamazaki distillery was built in 1923 and was Japan’s first commercial whisky distillery. It is located on the ouskirts of Kyoto, Shimamoto. The distillery is between two important markets with good transport links, and is at the meeting place of of three rivers, meaning a plentiful supply of water. A stifling summer humidity and winter chill makes it ideal for whisky production.
