Mother’s Day Brunch Casserole

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes

Ingredients • olive oil • 5 medium russet pota- toes, chopped • 8 eggs • 2 cloves garlic, sliced • 1 small onion, chopped • 1 package shredded Italian cheese • 3 scallions, chopped • 1 package of sausages, cooked and crumbled • 1 red pepper, chopped • 1 bunch fresh parsley • 1 package bacon, cooked crisp

Here’s how to make it: Heat some olive oil in a skillet. Add the potatoes and cook for about 7 min- utes on each side until golden brown. Add the cooked sausage on top of the potatoes. Next add the red pepper, scal- lions and garlic on top of the sausage and a handful of cheese. Crack the eggs into a bowl, then pour them over the top of the potatoes. Season with salt and pepper, to taste. Once the eggs are cooked through, add the chopped parsley. Remove the skillet from the heat. Slide or spatula out of skillet and onto a cutting board or large plate.Top with the cooked bacon and serve. Let mum have an extra hour in bed while you prepare this tasty treat! Blitz the biscuits in a food processor with the cinnamon, then pour in the melted butter. Mix well to coat all the biscuit crumbs, then press into the lined tin to create an even base. Put in the fridge to set for about 1 hr.

• STEP 2 To make the cream cheese filling, beat the cream cheese with the icing sugar and vanilla until light, then add the double cream and beat until well mixed and thickened. Spoon this onto the biscuit base, smoothing across the surface and ensuring no air bubbles remain. Smooth with the back of a spoon or spatula and put in the fridge to set for 3 hrs.

Carefully spoon this onto the cream cheese layer, once again using the back of a spoon or a spatula to smooth across the surface and ensure no air bubbles remain.
