Fra’ Mani Sweet Apple Ham will be available to Fra’ Mani distribution partners beginning May 20, 2015, and Hot Ham beginning June 3, 2015. “This expansion of our cooked salumi line provides consumers with greater variety and access to Fra’ Mani products” said Paul Bertolli, Fra’ Mani Founder & Curemaster. Fra’ Mani Sweet Apple Ham comprises three major muscles of the pork leg - inside round, outside round and eye of round. The legs are trimmed carefully, leaving a thin layer of flavorful cover fat on the outside. The muscles are lightly brined, formed by hand into a teardrop shape, trussed, and lightly smoked over natural hardwood. Fra’ Mani Sweet Apple Ham has an appealing light pink complexion and is infused with the flavors of apple juice and brown sugar, two major components of the brine. Fra’ Mani Hot Ham is made from the knuckle of the pork leg, situated above the shank on the bottom of the pork leg. This muscle is lean and dark in color with a distinctively intense flavor. After careful trimming, the knuckle muscle is lightly brined, seasoned liberally with Calabrian red pepper, and smoked over natural hardwood. Fra’ Mani Hot Ham has an appealing rosy face, smoky aroma and piquant flavor, and its compact muscle grain results in a fine texture. 1 For both new hams, although water is “picked up” in the brining process, it later evaporates completely during cooking. Thus, the hams are simply HAM with no resulting added water in the finished product. A long “Delta” roasting cycle is used to ensure a moist and supple texture in the finished hams. Consistent with the company’s well-established practice of using ingredients of the highest quality from sustainable sources, the pork for both new hams comes from family farmers committed to the well-being of their animals and their land. The animals are never given antibiotics, artificial growth hormones, growth-promoting agents or meat by-products, and are raised on pasture or in deeply bedded pens.
