The excessive use of salt by the American people has been of increasing concern to food scientists in recent years. In its report entitled "Dietary Goals for the United States," the United States Select Committee on Nutrition and Human Needs made a number of recommendations, one of which is to reduce salt consumption by 50 to 80 percent.
