REFERENCES > . « 67 APPENDIX > . • 74 INTRODUCTION In India, plant foods are consumed in larger proportions than animal foods because the majority of Indians are ve. tarians, some more strict than others. Therefore, it is im- portant that the consumption of plant proteins be encouraged, and better and more nutritious plant foods be introduced. Legumes play an Important part in the diet of the Indian people. Their nutritive value has been studied in India and in other countries, but little attention has been given to the methods of preparation for serving them. Hence, they are of- ten considered a monotonous and unpalatable food. To encour- age those who can afford to use legumes in greater quantity, it seems desirable to make available directions for preparing and serving them in various ways. -

Half the vegetables and 95 per cent of the fruit eaten in the UK come from beyond our shores. Increasingly, it arrives by plane - and air travel gives off more CO2 than any other form of transport. Agriculture and food account for nearly 30 per cent of goods trucked around Britain's roads and, according to a Government report in 2005, the resulting road congestion, accidents and pollution cost the country £9bn a year The most contentious food miles are clocked up by the fresh fruit and vegetables arriving by plane from across the globe. -
