2019 var et fantastisk SMWS år, der bød på nye tiltag krydret med velkendte elementer.

Vi starter 2020 med et lille mini outturn som du netop skal til at fordybe dig i. Flaskerne sættes til salg fredag den 10. januar kl. 13.00. Jeg kan ikke lade være med at gøre opmærksom på The Beachcomber, som du kan læse mere om på de næste sider. En virkelig spændende whisky bestående af malt fra 1. fill barrels fundet i Campbeltown og højlandet. Den tilhører den lette ende af Oily & Coastal profilen, så du kan forvente en ”waxy” whisky krydret med lidt noter af havet.

Det er også i januar at vi tager hul på årets absolut største SMWS begivenhed, nemlig den årlige Festival. Interessen har denne gang været enorm, hvilket vi er utroligt beærede over, og hele teamet er klar til at stå på hænder og fødder for at give deltagerne en uforglemmelig oplevelse. Vi glæder os!

Såfremt du er så heldig at have billet til Festivalen, og påtænker at gøre brug af et af de mange madtilbud, er det vigtigt at du får bestilt madpakken på smws.dk senest med udgangen af uge 4.

Kigger vi lidt længere frem, så vil vi naturligvis fortsætte vores kørsel rundt i landet til Casual Days. De kører fra udgangen af marts til slutningen af december.

Derudover har vi planer om at lave online smagninger i marts, maj og september, hvor de enkelte smagesæt vil være tilgængelige på Casual Days måneden forinden.

Til de gode folk i København er der lidt godt nyt på vej. Om alt går vel, er det planen at være mere synlige i hovedstaden. Vi er i gang med at planlægge nogle spændende aktiviteter, hvor det hele gerne skulle kulminere i mats 2021 – meget mere om dette senere.

Cask 1. Fill Barrels Date distilled 17-November-2011 Age 7 years Strength 50,0% Region Highland & Campbeltown Outturn DK 120 bottles

Looking to our flavour profiles for inspiration, we decided to experiment with malts that displayed classic coastal characteristics. Exploring our warehouse, we identified a selection of 1st fill bourbon barrels from both Campbeltown and Highland regions as our blending ingredients. After creating and assessing a number of different recipes, we settled on the 12th one, which sits at the lighter end of the flavour profile with just the slightest hint of peat behind a boatload of fruit and coastal evocations. The Panel favoured this for its balance and complexity. A blended malt of great intrigue, displaying remarkable texture and vibrancy. We give you The Beachcomber...

A beautiful and evocative nose! Freshness, sunlight, seashore, medical balms, sandalwood, petrichor and wild herb gardens all jostle together for attention. Greenery, waxes, old papers, distant seaweed and complex, fragrant mineral aspects. Dilution offers up bog myrtle, heather flowers, juniper and lemon peel. Superbly fresh! The arrival in the mouth is tart. Raw gooseberry with delicate acidity, cut grass, gorse bush prickle and red apple. Some sea buckthorn, grapefruit pith, Citra hops and buttery cereals. Beguiling stuff! With water there’s a kiss of vanilla, some sweet cereals and pink sea . Hints of salty , wild mint leaf, children’s medicines, lime zest and brine diluted with extra virgin olive oil. The finish drifts endlessly out to sea. Drink this one with your eyes closed... Cask Ex-Bourbon / New Oak Hogs- Dancing a head HC#4+ duet Date distilled 29-September-2008 Age 10 years Strength 55,1% SPICY & DRY Region Highland Outturn DK 18 bottles CASK NO. 59.57 Rich, aromatic, luscious and fragrant were only a few of the adjectives being tossed around the DKK 700 room followed swiftly by descriptors of walnut and hazelnut oil, polished antique oak furniture, fig blackberry jam and spicy caramel shortbread. The taste was that of ginger chocolate cookies and balsamic-glazed carrots. With water very ‘liqueur- like’ aromas of Galliano and Chambord were followed by dark chocolate and Tia Maria parfait but now with a medium dry finish of wild herbs such as anise, juniper, rosemary and myrtle. After nine years in an ex-bourbon hogshead we transferred this whisky into a heavy charred new oak hogshead.

Cask Refill Hogshead Rose petals on Date distilled 24-September-2007 a rock pool Age 11 years Strength 59,5 % PEATED Region Islay Outturn DK 24 bottles

CASK NO. 53.304 Clean sea air filled our souls and invigorated our senses as we envisioned mussels, seaweed and rose petals floating on a rock pool. The floral scent DKK 850 sweetened to Turkish delight and marshmallows being toasted on a peat fire. A hint of salted blackcurrants preceded medicinal cues that led us to bandages and creosote on old wood. The palate announced itself with a big chilli heat that thickened to ginger marmalade with a juicy and moreish demeanour. Sweet smoke filled the mouth, like a fine cigar, as salted caramel blended with the cooling tones of fresh peppermint. A sprinkling of coal dust joined a mellow ride through chewy liquorice before landing onto the big, sweet and smoky finish. Cask 1. Fill Barrel Ye olde fish Date distilled 12-February-2010 mines of Age 9 years Strength 63,4% Norwich! Region England Outturn DK 12 bottles

peated A surprisingly fragrant and enticing nose full of mineral and bluster. Lemons and limes, herbal CASK NO. 137.4 ointments, a distant burning hospital, medical embrocations, jasmine tea, gorse flowers, pea soup and ham hock with a dollop of piccalilli. There’s DKK 900 even touches of wildflowers such as daisies and carnations in the distance. Water brings out clover, nutmeg, chamois leather, tarragon, crispy fish skin, browned butter and a big dollop of salty sourdough. A constant wisp of woodsmoke in the background. In the mouth it’s pure petrol. Cask strength, bone dry young riesling with herbal butter, fresh sage, truffle salt, elastoplasts, mechanical oils, high ester rum, banana chips and anchovy paste. With reduction comes an elevated oiliness to the texture. Olive oil mixed with brine, salted liquorice, sandalwood and hot coals. A kiss of fruity chilli at the end.

Cask 2. Fill Barrel Citrus mist Date distilled 19. September- 2018 Strength 50,7% Single Cask Spirits Region Glasgow Outturn DK 12 bottles

CASK NO. GN1.4 A viscous greeting offered fine sprays of citrus oils alongside juniper berries, Brazil nuts and oily pink DKK 650 peppercorns. Floral notes then emerged through the mist as nasturtiums, bergamot and rose water sprinkled over lavender bushes and dessert apples. The palate carried a peppery spice that integrated with orange, grapefruit and black grapes before a dry finish delivered cloves, black olives and tree bark. The reduced nose was more floral with lavender, cherry blossom and mandarins but now with rhubarb and herbal notes of sage, tarragon and dill. Still devilishly oily the palate embraced lemongrass with melon, lemon and nut husk on the finish. Cask 2. Fill Barrel Peppermint or Date distilled 19. September- 2018 peppercorns Strength 50,9% Region Glasgow Single Cask Spirits Outturn DK 12 bottles Oily citrus notes combined with pine wood and CASK NO. GN1.5 pink peppercorns alongside eucalyptus on a bed of juniper and peppermint. Fresh oranges followed on the palate with drying notes of grapefruit, allspice DKK 650 and tree resin. A dash of water released roses and lavender with the soft fruits of blueberries and wild strawberries as incense wafted over Earl Grey tea. The palate now exuded fresh herbs and aniseed with delightfully oily textures. Apples and pears joined mandarins and fruit jelly sweets to provide a juicy character that dried on the finish to crushed peppercorns and menthol. WOULD YOU LIKE TO BUY THE SAME WHISKY FOR LESS?
